Breakfast Sausage

(1 person found this helpful) Posted by tranch

I have used this recipe several times with great results. I've adjusted the ingredients to what I have on hand. I have used lean (4% fat) ground pork, adding 1 egg for binding with the oatmeal. I also included some (1/4 tsp or so) poultry seasoning. — Joanne Bryant Sep 13, 2007

Shortcut Sticky Rice

This a great way to make sticky rice...one of my grandson's favorites. I did use medium grain rice and low sodium chicken broth and no salt and it turned out perfect. Thanks Mercy — Joanne Bryant Jul 21, 2005

Mushroom Risotto

(3 people found this helpful) Posted by CountryLady

It's been a long time since I made risotto and, when I saw this recipe was prompted to try it. It is indeed an excellent risotto and went over well with my family, even my grandson who is reluctant to try new things. Made a couple... — Joanne Bryant Apr 23, 2005

Eggplant (Aubergine) Caponata

Posted by Gingerbear

I dearly love eggplant. This recipe, however, was a bit too sweet. I think the next time I make it, I will eliminate the sugar. It was certainly easy to make...I like the idea of putting all in one pot at one time. It wasn't necessary to stew it... — Joanne Bryant Feb 13, 2005

Asiago and Sage Scalloped Potatoes

(3 people found this helpful) Posted by Julesong

We were given three wedges of Asiago cheese a couple days ago and in looking for ways to use it, found this recipe. The results were excellent. I didn't have cream so used a can of low fat milk instead which lessened the fat and calories. Also... — Joanne Bryant Dec 16, 2004

Edna's Apple Crumble (Aka. Apple Crisp)

(1 person found this helpful) Posted by 1Steve

Really a great recipe. We had some apples that were beginning to age and it used them beautifully. I did use 3/4 cup of oats and half Splenda and half brown sugar to reduce the sugar carbs and it worked just fine! Will make it again. — Joanne Bryant Nov 30, 2004

Hot Pepper Jelly

Excellent!!! Made some for horsdorves with cream cheese and crackers at Thanksgiving. I used jalapenos, but I think I'll include a habanero next time to make it a little hotter. Thanks for posting this! — Joanne Bryant Nov 30, 2004

Crunchy Oven Fried Fish

(4 people found this helpful) Posted by Carole Reu

This is a wonderful way to enjoy "fried" fish without all the fat. I used thick catfish fillets and breaded both sides of the fish and gave it a quick top spray with the nonstick cooking spray. I also used Italian seasoned bread crumbs and,... — Joanne Bryant Feb 20, 2004

Pineapple Chicken Supreme

(2 people found this helpful) Posted by Beeks

Very successful...everyone in the family liked! (which is quite a trick) We had some leftover crushed pineapple in the freezer which I used instead of pineapple chunks and it turned out just fine. Really easy to make. — Joanne Bryant Oct 30, 2003

Shrimp Ramekins

(1 person found this helpful) Posted by Derf

This was an excellent recipe. Since I have to watch my cholesterol and saturated fat, I used non-fat milk and margerine. I doubled the sauce recipe, used half with the shrimp in the ramekins, added additional milk to the rest and mixed it with... — Joanne Bryant Aug 22, 2003

Shrimp Quickie

(2 people found this helpful) Posted by Hey Jude

I've done this before, but I marinade the shrimp in the dressing (1/3 cup per lb of shrimp)with extra crushed or minced garlic for about an hour. Then I grill or broil it until the shrimp is just done...only takes a few minutes. Yummm — Joanne Bryant Aug 15, 2003
