New Mexico Trail Mix in a Jar

We added quite a bit more cayenne to get more kick. This makes a great gift basket item. — venus2 Dec 6, 2003

Braised Chicken With Mushrooms and Sun-Dried Tomatoes

(1 person found this helpful) Posted by sugarpea

This is a very tasty dish & we will definitely make it again. I think I will try with white wine as the red somewhat overpowered the taste of the basil and sun dried tomatoes. Thanks, Sugarpea — venus2 Nov 1, 2003

Creamy Ranch Chicken

Posted by LauraTracey

My husband thinks this is the best chicken he ever ate. It was very easy to prepare. I didn't have any mushrooms so substituted sliced ripe olives. We will definitely have this many times. — venus2 Sep 21, 2003

Chicken Breasts with Cranberry Salsa and Cilantro Cream

(2 people found this helpful) Posted by ciao

We served this at a dinner party & it was a huge hit! I had to make copies for everyone. I used regular cranberry sauce instead of the orange/cranberry. It's easy & so tasty. — venus2 Sep 19, 2003

Low-Carb Stuffed Zucchini

(2 people found this helpful) Posted by Queen of Everything

Easy & good for all that surplus zucchini. Plus it is low carb. I would use a small amount of tomato paste instead of sauce because of the water content in the zukes. — venus2 Sep 12, 2003

Rolled Broccoli Meatloaf

Posted by LeahG

This is real easy but we found it needed more seasoning. We added some garlic & onion to the broccoli as well as adding crshed pork skins to the meat. (no bread)We'll definitely make it again & maybe try different stuffings. — venus2 Sep 11, 2003

I used egg instead of sour cream & added a pinch of cayenne for a punch. This is a delicious recipe; very quick and easy. — venus2 Aug 22, 2003

Roasted Grape Tomatoes

(2 people found this helpful) Posted by Tracy K

We used these wonderful tomatoes as a base for a salad by adding feta cheese and kalamata olives. Of course, we still like them right out of the jar(make a quart & keep in a mason jar in the fridge)with our BBQ. — venus2 Jul 13, 2003

Portuguese-Style Pork Chops (or chicken)

(1 person found this helpful) Posted by Bev

A great summer dish! We used the chicken breasts & marinated for 24 hours. Because they were skinless I was worried about drying out. but we backed them off the direct fire to an iron griddle and left them to cook for 30 minutes. Everyone raved... — venus2 Jul 13, 2003
