Cherry Cake

Posted by DotM

This is more like muffins than cake. Makes a very thick batter and a really heavy cake. I assume that the "almonds" ingredient is meant to be almond extract, but even with all three extracts, it's pretty bland. — lucy k. Dec 22, 2008

Simply Delicious New York-Style Cheesecake

Posted by Luby Luby Luby

Perfect cheesecake. I left out the orange zest because I didn't want to overdo the citrus, and the vanilla bean and bourbon because I didn't have any (increased the vanilla to 1 1/2 tsp). Still perfect. — lucy k. May 10, 2006

Greek Layered Dip With Pita Crisps

Posted by MarieAlice

Very good. Attractive presentation. I loved the pita crisps. The only part I had trouble with was figuring how much 200g of chickpeas was. I used 1 cup of canned chickpeas, and that seemed about right. This doesn't make a huge amount of the yogurt... — lucy k. Dec 19, 2005

bananaberry bread

Posted by chia

This is a very good recipe. I've made it as bread and as muffins. It makes about 18 medium sized muffins — baked mine at 375 degrees for 25 minutes. I prefer to use frozen blueberries and mix them with the dry ingredients before stirring into the... — lucy k. Aug 14, 2005

Mirj's Incredibly Rich Chocolate Mousse

Posted by Mirj

Incredibly rich does describe this. I used 85% chocolate and found it too bitter before adding the egg whites, so added sugar to the egg whites, and used Kahlua instead of brandy. I also added a couple of extra beaten egg whites for more volume... — lucy k. Jul 16, 2005

This is fabulous. Quick too. I wouldn't change a thing. — lucy k. May 16, 2005

Coffee Cake Muffins

Posted by Darlene Summers

Very good muffins. Moist and dense and sweet (but not too sweet). I halved the topping, and half seemed like enough. Used brown sugar for the topping. I wasn't sure what to do with the extra tablespoon of flour because the recipe never called for... — lucy k. Apr 10, 2005

Spinach Cauliflower Toss

(1 person found this helpful) Posted by JillAZ

Great combination of textures and flavours, wonderful dressing. I used rice wine vinegar. I don't like salad to have too much dressing, so would recommend serving dressing on the side. Thanks for posting. — lucy k. Mar 31, 2005

Gingery Maple Glazed Chicken

(1 person found this helpful) Posted by MarieAlice

This is an excellent recipe. I used boneless breasts, so cut down the cooking time to 40-45 minutes. Used 2 tbsp freshly grated ginger. The sauce didn't thicken as much as I wanted, so I removed the chicken, added some cornstarch solution to the... — lucy k. Mar 28, 2005

New England Soup Factory's Sweet Potato Chicken Barley Soup

Posted by winkki

This gets full points for being unique, and you can't go wrong with barley. I found it on the bland side, so added about 1/4 tsp of cayenne pepper and 1 tsp of Chinese five spice. — lucy k. Mar 27, 2005

Brunch Omelet Torte

(1 person found this helpful) Posted by keen5

I had high hopes for this, and it looked beautiful coming out of the oven. However, the bottom pastry was completely soggy (even using a glass pie plate, which is supposed to be better for crisper crusts). Maybe this would be better if it was... — lucy k. Mar 27, 2005

Rice with Ginger and Coriander

Posted by Sueie

I won't do the stars because I didn't stick to any of the recipe amounts as I thought the flavours would be extremely strong. I cooked 1 1/2 cups rice in 2 cups chicken stock and 1 cup water, and then used 2 cloves garlic, 1 1/2 tablespoons... — lucy k. Mar 27, 2005

Penne All' Arrabbiata

(1 person found this helpful) Posted by Bev

This was good. I didn't care for the cubed salami in this, so I think next time would brown some italian sausage to substitute. — lucy k. Feb 24, 2005

Linguine with Red Clam Sauce

Posted by Elena Bedner

This made a delicious meal for my seafood/pasta/tomato sauce loving Valentine. I used only a 5 ounce can of clams, as that seemed like enough in proportion to the sauce. Even so, the liquid made a very soupy sauce. I simmered it for some extra... — lucy k. Feb 13, 2005

Sweet Potato Fries

(8 people found this helpful) Posted by ratherbeswimmin'

These are excellent, and quick to prepare as a snack or side dish. I wouldn't skip the egg white, as it adds to the texture of these fries. Parchment paper is a good idea, as I found these tend to stick even with the cooking spray. For a dip, try... — lucy k. Feb 9, 2005

Turkey Chowder

Posted by barefootcountrygirl

This is so much better than regular turkey soup. I minced my turkey, added some diced potatoes and supplemented the few green onions I had with a chopped yellow onion. Added about a tablespoon of dry mustard, a teaspoon of fennel seed, and... — lucy k. Jan 8, 2005

Garlic Green Beans

Barley Casserole

(3 people found this helpful) Posted by Aroostook

This barley is NOT bland. A very tasty addition to the same old pasta/rice/potato rotation. The only thing was, this was still a sloppy mess after an hour in the oven. After 90 minutes, I uncovered it and left it in another 15 minutes to get rid... — lucy k. Sep 5, 2004
