Blueberry-Oatmeal Muffins

Posted by Dancer^

I didn't even have all the right ingredients. I had to use soured milk instead of yogurt, and only had about 2 T of butter (I used an extra 2 T of milk to make up the difference) but turned out really well anyways. — Chef #808063 Nov 2, 2009

Chocolate Chip Oatmeal Cookies

Posted by Kim D.

Very tasty. I substituted whole grain flour, used half butter and half applesauce and reduced the sugar to 1 cup. Even with these changes, the cookies were very tasty. — Chef #808063 Sep 27, 2009

Zucchini Nut Muffins

Cut sugar to 11/2 cups, used all whole wheat flour, and half applesauce/half oil...came out delish! Only got 18 muffins though — Chef #808063 Sep 2, 2009

Blueberry Crisp (Diabetic)

Posted by lazyme

I tripled the recipe and used wild blueberries, plus a squeeze of lemon. Because it wasn't for diabetics, I added a bit more sugar but actually think it would be better with exactly the amount of sugar called for as it was just a little too sweet.... — Chef #808063 Aug 8, 2009

Raisin Bran Muffins That Work

Posted by Lennie

I used whole wheat flour, cut the canola oil to 1/4 cup (adding 1/4 cup yogurt instead) and cut the sugar to 1/2 cup. Despite these changes, they were delicious. Soaking the bran makes them nice and tender — Chef #808063 Jul 8, 2009

100% Whole Wheat Blueberry Muffins

Really good, especially for 100% whole wheat. Not heavy at all, and not too sweet. — Chef #808063 May 18, 2009

"Put Down Your Fork!" Tuna and Bean Salad

Posted by Debby H

Tasty, and very easy. I didn't have all the right ingredients: I used apple cider vinegar, dried basil, cucumbers and tomatoes (instead of the peppers), and no scallions. Still, delish! — Chef #808063 May 1, 2009

Rice, Lentils and Dried Cranberries Garnished With Pine Nuts

Posted by ~Rita~

Tasty and very easy. The cranberries give a touch of sweetness. I used brown rice, puy lentils, and an extra cup of water. — Chef #808063 Apr 23, 2009

Kittencal's Easy Cinnamon Flop (Cinnamon Brunch Cake)

Posted by KITTENCAL

Very sweet, even though I only used 1 cup of sugar in the batter. Gave it 5 stars because it was the first dessert to disappear at the potluck. I used the creamy white glaze (half recipe) with milk since I didn't have cream. — Chef #808063 Apr 18, 2009

Old Fashioned Southern Cornbread

Posted by appleydapply

Pretty good, but kinda gritty. Then again, that could have been my cornmeal. I, too, think a little sweeter would have been tastier, even if it is less authentic. Only took 15 minutes in the oven. — Chef #808063 Mar 25, 2009

Chicken Tortilla Soup

Deelish. I made without any corn or chilis, since I didn't have any, but used a full can of hominy. Didn't need cheese it was so tasty without — Chef #808063 Mar 25, 2009

Slow Cooker Chicken Cacciatore

Tasty and so easy. Used bone-in chicken pieces, and by the end they were falling off the bone. — Chef #808063 Mar 19, 2009

One Pot Spicy Sausage and Lentils

Posted by Jewelies

Very tasty. We had particularly nice sausages so that probably made a big difference. Took them out of the casings instead of cooking and slicing — Chef #808063 Mar 19, 2009
