Spanish Chicken Legs and Thighs With Olives and Capers

Posted by KITTENCAL

This was really good. I left out the olives and capers, but otherwise followed instructions. It made the whole house smell wonderful. I think next time I'll use regular salt instead of seasoning salt, and leave the potatoes out altogether. Thanks... — Jeffsmom Nov 16, 2009

Kittencal's Fried Cabbage With Bacon

Very good. I left out the bacon and only used 1 tsp. brown sugar. Thanks for the posting! — Jeffsmom Nov 9, 2009

Pete's Scratch Pancakes

Posted by Bill Hilbrich

Can't remember if I rated this before, but these came out very good. I substituted 1/2 cup whole wheat flour for the regular. Very good! — Jeffsmom Nov 9, 2009

Rachael Ray's Deviled Egg Salad on Pumpernickel

(1 person found this helpful) Posted by AmyZoe

I halved the recipe to make enough for 2 hearty sandwiches. I, too, add sweet relish (instead of celery & onion) and found it to be a little spicy. Next time, I think I'll leave out the chili powder altogether. Thanks for the posting! — Jeffsmom Nov 9, 2009

Thai Chicken Thighs (Crock Pot)

Posted by Hey Jude

I cooked the thighs on high in the crock, broiled them for a few mintes per side, then reduced the cooking juices for a thicker sauce. Not bad. — Jeffsmom Nov 2, 2009

Simple Hot Sauce

Posted by Chef #450604

Tastes just the like the jalapeno sauce you get in the store. I used 10 peppers; it only yielded about 1/3 cup, but it was very good. PLEASE wear gloves when handling peppers, as I rubbed my de-seeding hand across my chin and felt quite fiery for... — Jeffsmom Oct 26, 2009

Basic Italian Eggplant Stew

Posted by M&A's

This was my first time making an eggplant stew. I used 4 chinese eggplant (in an attempt to equal 2 globes). I let them rest for 30 minutes, with only 1 TBSP salt, and I squeezed the cubes by hand to extract as much liquid as possible. I think it... — Jeffsmom Oct 23, 2009

Kittencal's Ground Beef Fried Rice

Posted by KITTENCAL

This was a good, economical meal, and it made quite a bit for us to have leftover. Will definitely make again. Thanks, Kitten! — Jeffsmom Oct 21, 2009

Shrimp Egg Rolls (Simple and Fast)

Posted by birdie #3 (andrea)

This was a fun project. I used a coleslaw mix instead of the cabbage, sprouts and carrots. The filling was good, but they unrolled in the oil, causing them to absorb more grease. Will try again. Thanks for the posting! — Jeffsmom Oct 5, 2009

Garlic Lover's Chili

Posted by Siava

This was really good - in my opinion, just the right amount of garlic. I only used 2 cans of beans and left out the fresh tomato. I also halved the amount of chili powder, pepper and thyme, and it came out very flavorful. Thanks for the posting! — Jeffsmom Oct 2, 2009

Leftover Mashed Potato Soup

Posted by Sue L

I agree that this was a great way to use up leftover mashed potatoes. I left out the mushrooms (son's preference) and reduced the amount of kosher salt (as the potatoes had already been salted). Ingredients were on hand; perfect for a "before... — Jeffsmom Sep 28, 2009

Meat Lover's Chunky Mushroom Pasta Sauce

Posted by KITTENCAL

I should have taken your advice about adding fresh garlic to the mix - it just felt like something was missing. I did like how thick it came out. My son dosen't like mushrooms, so next time, I think I'll saute them alone and chop in food... — Jeffsmom Sep 18, 2009

Easy Cheddar Potato Cakes (Made With Instant Potatoes)

Posted by KITTENCAL

These did not go over well at my house - but I loved them! Especially hot out of the pan. This is a very economical side dish. I forgot to add the green onions (which I had), but I do believe bacon would be a welcome addition (thanks, Mandy!).... — Jeffsmom Sep 14, 2009

Carolina Crispy Buttermilk Fried Chicken

(2 people found this helpful) Posted by NcMysteryShopper

This was great! I only fried 1 chicken, and unfortunately, used 2 per cent milk for the brine (won't make that mistake again). Next time, I think I'll use buttermilk for the brine, and prepare the chicken the night before. Thanks for the posting! — Jeffsmom Aug 24, 2009

Super-Quick No-Fat Microwave Gravy

(1 person found this helpful) Posted by KITTENCAL

This was quick, easy, tasty and went over well at my house. However, the bouillon cubes I used were VERY salty - when I make this again, I'll try to find low sodium cubes. Thanks for the posting, Kitten! — Jeffsmom Jul 27, 2009

Microwave Eggplant (Aubergine) Parmesan

Posted by M&Mers

After microwaving the eggplant, I put the slices under the broiler a few minutes to further cook them before assembling. Didn't help much - could have been the age of the eggplant. — Jeffsmom Jul 27, 2009

Microwave Cornbread

This did not set well after resting, so I had to give it 8 more minutes on high. This is sufficient if you need cornbread for dressing. — Jeffsmom Jun 29, 2009
