Harvest Pumpkin Apple Bread

(1 person found this helpful) Posted by Kree

This bread was good. It is super moist. I made a few changes. I used whole wheat flour, 2 eggs and 2 flaxmeal "eggs", mostly applesauce with a little oil and splenda instead of the sugar. I also added a little pumpkin pie spice and two apples... — Chef #750362 Nov 6, 2009

Jewel Roasted Vegetables

Posted by ~Jen~

So good! I just threw all my veggies together along with butternut squash and used rosemary instead of thyme. I roasted at 400 for 35 minutes then turned the oven up to 450 for the last 25 minutes. They were fabulous! — Chef #750362 Sep 30, 2009

Fabulous! Loved it. I love quinoa and figs, so I was excited to find this recipe. The figs in this are like little sweet treats in every bite. This recipe is staying in my recipe box, so yummy! — Chef #750362 Sep 13, 2009

Orange-Spiced Carrots (Fat-Free)

Posted by KITTENCAL

These were good. What I really liked about the recipe is that is does not have butter in it. I just can't bring myself to add butter to my veggies. Easy to make although I did have problems with the cornstarch clumping, next time ill make a slurry... — Chef #750362 Sep 13, 2009

Really good, and so easy! Flavors are great and I love how the cornstarch is used to make a nice thick sauce. Will use the extra chicken tomorrow for tacos. Thanks! — Chef #750362 Sep 2, 2009

Oven-Dried Tomatoes

(1 person found this helpful) Posted by Mirj

These are fabulous! I love sun dried tomatoes, but don't like that they are soaked in oil or too dry. These taste similar, but even better. I used only about 1 tablespoon of oil and used dried oregano and fresh basil, YUMMY, going to get more... — Chef #750362 Aug 4, 2009

These are yummy. I made a few little changes, I used two egg whites instead of one whole egg and 1/4 cup plain greek yogurt instead off the oil and added raisins. They came out good. I will make again for sure. — Chef #750362 Jul 31, 2009

Raisin Bran Muffins That Work

These were really good. I made a few minor changes. I used oat bran instead of wheat, used honey instead of molasses because I didn't have molasses. I added ground flax meal and cut the oil down to 1/4 cup. Also used fat free milk and added... — Chef #750362 Mar 29, 2009

Pumpkin-raisin Cookies

These are a great low fat cookie. They are nice and chewy. I dipped mine in cinnamon sugar before baking and used pumpkin pie spice instead of the cinnamon and nutmeg. Yummy, and no need to feel guilty after eating them! — Chef #750362 Nov 22, 2008
