Spicy Thai Dipping Sauce (Nuoc Cham)

Posted by spatchcock

There are many variants of this sauce but most of them require galangal, lemon grass, shallots, and most importantly, coriander. These ingredients are essential in Thai cuisine, these would have given the recipe a bit more authenticity. — Chef #472116 Jan 13, 2008

Authentic Filipino Chicken Adobo

(2 people found this helpful) Posted by dageret

There should be more vinegar than soy sauce. adobo is a vinegar based recipe. it's popular because it preserves the meat. It is also NOT traditional to use onions. Try putting some sugar and 2 pieces of anise seeds. — Chef #472116 Jun 24, 2007
