Gluten-Free Cornmeal Muffins

Posted by Queen Bead

I made these as a 'cornbread' in an 8x8 pan. The mixture was VERY thick, almost too thick (perhaps that's why they are better as muffins?), but delicious. UPDATE: I made these as muffins and they are the PERFECT recipe. My new favorite. Chef #432668 Mar 25, 2009

Lemon Herb Quinoa

Posted by Mirj

I must admit that I didn't add any of the spices except for salt and pepper... but the lemon and lemon rind really make this dish lovely! And toasting the quinoa REALLY made a difference; I will do this every time I make it now - thanks for the tip. — Chef #432668 Jan 17, 2009

Spinach Lasagna

(1 person found this helpful) Posted by SweetAsHoney

This is excellent with FRESH spinach! I added some red onion and baby bella mushrooms that I sauteed a few minutes beforehand to get the liquid out. Love it! — Chef #432668 Jan 5, 2009

Gluten Free Danish

Excellent recipe! I found the danishes a bit too big for me, so next time I will use about half of the dough for each to make them smaller. I also found that spraying my hands and fingers with non-stick cooking spray helped me for them without... — Chef #432668 Dec 1, 2008

French Silk Pie, Cooked

(1 person found this helpful) Posted by Steve_G

This was the biggest hit at my Thanksgiving dinner! Wow. It did take more than 20 minutes for my mixture to thicken, but other than that, everything turned out wonderful. Like someone else said, the taste is not exactly what I remembered as... — Chef #432668 Dec 1, 2008

White Chili (Football Soup)

(1 person found this helpful) Posted by Tornado Ali

I made a few variations: no meat, added celery, doubled the beans, and used vegetable broth. I have to say this was REALLY liquid-y. Next time I will drain the beans, and use about half of the broth. A wonderful addition was a dollop of sour cream... — Chef #432668 Nov 18, 2008

Lemon Rice w/ Peas & Green Onions

Posted by Sue Freeman

Really great recipe! The seared green onions are a wonderful flavor - I will double them next time! I used brown rice as it was what I had. Lovely! — Chef #432668 Nov 6, 2008

Black & White Vegetarian Chipotle Chili (Crock Pot)

(1 person found this helpful) Posted by Vino Girl

I used kidney beans instead of navy beans. This was delish - except next time I will tone down the chili powder by about half. — Chef #432668 Nov 5, 2008

This was easy and excellent! I added a tub of ricotta cheese and way more Italian cheese than called for. — Chef #432668 Apr 16, 2008

Low Carb Green Bean Casserole

Nice alternative to the canned soup recipe. This is VERY rich; I think next time I will use half-and-half instead of heavy cream, and light mayo. — Chef #432668 Mar 24, 2008

Yummy Baked Potato Skins

Posted by CrAzYcOoKeR222

These were great. Next time I will probably add more garlic and salt to the oil mixture, or play around with some alternate seasonings (like Cajun!). The parmesan cheese was a really nice touch. — Chef #432668 Feb 4, 2008

Great bread, I loved it! All though I did see this exact recipe in a cookbook last week - I didn't know if it was important or not to cite sources. — Chef #432668 Jan 3, 2008

Gluten Free Apple Cake

(2 people found this helpful) Posted by GlutenFreeGirl

WOW!! I used Splenda for the sugar but didn't alter it otherwise. I kept the apples kind of chunky, too, more like minced instead of shredded. This was such a delicious cake I can't believe it. You are right, it would be nice with an icing of some... — Chef #432668 Nov 12, 2007

Fabulous & Easy Potato Casserole Side Dish

Posted by plantfreek

This got rave reviews at my work potluck. I mixed everything together the night before and stuck it in the fridge. Just popped it in the oven the next day. I added some extra cheese on the top at the end, but otherwise stuck to the recipe. Thanks! — Chef #432668 Oct 24, 2007

Pretty good, all thought I thought it could have used more soup or liquid of some sort. I used twice the amount of cheese, with 1/2 of it on top. — Chef #432668 Sep 21, 2007

No-Bake Granola Bars
