Zucchini With Jalapeno Monterey Jack

This is a quick recipe - and it was good. I don't use the microwave so I put it in an oven safe dish, and baked it for 10 minutes at 350. I also didn't use the flour. Turned out very tasty — Shannon in VA Aug 23, 2008

This is wonderful. We served it over Fresh Spinach Salad with Balsamic Dressing. I used a separate tomato for the pulp though, and cut the dinner tomatoes in a "flower". AWESOME. — Shannon in VA Jun 26, 2005

I loved the idea of the recipe - however, the msg in canned soups turns me off. I substituted organic chicken broth and added arrow root (thickener) and some sauteed shitake's in butter - turned out wonderfully! — Shannon in VA Jun 26, 2005
