Sweet Curry Chickpea Casserole

Posted by death_by_parsnip

This is simple, versatile and tasty. I doubled it and made it on the stove top, serving over brown rice. I also cut down the curry and upped the cumin so it wouldn't be too spicy for my kids. Thanks for posting! We'll continue to use this. — Serah B. Nov 24, 2009

Oriental Black Bean Sauce

We found this amazingly flavorful. Very full-bodied, complex sauce. We served it immediately over roasted pumpkin and rice, and it was outstanding. I did not use yogurt. — Serah B. Nov 23, 2009

Oatmeal Spelt Brown Bread

Posted by Bobbiann

This turned out denser and more molassesy than I anticipated, but I think if I reduce the molasses next time so it isn't the dominant flavor, I'll really, really love the way all the tastes and textures work together in this bread. — Serah B. Nov 18, 2009

Simple to make, and very flavorful. Great way to use pumpkin. I've made this twice now--once for a homebound neighbor, and once for the family--and both times it's turned out great. The second time I followed the recipe more loosely and doubled... — Serah B. Nov 12, 2009

Chickpea Cutlets

We made these as small nuggets and fried them. They were awesome!!! Great, meaty texture and savory flavor. We made them for the kids, but the grownups inhaled them as well. Another brilliant recipe from Veganomicon! — Serah B. Nov 6, 2009

This was delicious. My kids and husband loved it as well. I added pineapple chunks, and used pineapple juice rather than water, which worked well. I also used cornstarch rather than arrowroot. Thanks for the recipe! — Serah B. Nov 5, 2009

Tempeh Bourguignon

I followed the recipe sort of loosely...for example, I added some zucchini and yellow squash I needed to use up, extra carrot (all julianned), extra garlic and substituted baby bellas (using about 12 oz) since I'm out of shiitakes. I did follow... — Serah B. Nov 2, 2009
