Crock-Pot Italian Sausage and Peppers

Posted by Sam #3

Very good and easy — my kind of dinner. Popped in a video while we had this great no work meal. I only used 1 pound of sausage (sweet) so skipped 1 onion, 1 bell pepper, 1 bay leaf and only used 2 garlic cloves. Thanks for sharing! — ellie_ Nov 20, 2009

Microwave Acorn Squash Rings

Posted by Dreamer in Ontario

We enjoyed this easy and fast way of cooking acorn squash, but next time I will cook them for less time — they were very soft which my family loved but hard to slice into rings. I did cook for the longest time instead of the shortest though.... — ellie_ Nov 16, 2009

This worked out very well for a busy day — I used low sodium/healthy soups which lowered the sodium count a bit. Thanks for sharing! — ellie_ Nov 16, 2009

Crock-Pot Barley Casserole

(1 person found this helpful) Posted by Sam #3

Delish! I changed this recipe slightly to make it more like soup by using about 2 cups of mushrooms (didn't measure), 1 can vegetable broth, 1 can tomatoes and about 1/2 can beef broth (which I needed to use up) and forgot about the pine nuts.... — ellie_ Nov 10, 2009

Pasta Pesto Rosso

Very good — made a few changes by using about half a package of sun-dried tomatoes and my frozen veggies contained both brocolli and caulflower. I also used 2 tomatoes cut up instead of cherry tomatoes. Doubled everything to serve 4 — but it... — ellie_ Nov 9, 2009

Great salad that is a tad more hearty than most without adding calories/fat! I skipped the basil (out of) the chickpeas and almonds. Delish! This makes a lot of salad! Will be having leftovers for lunch! Thanks for sharing! — ellie_ Nov 6, 2009

Great fish! I changed this recipe slighly as I didn't have any wasabi, so used an equal amount of ground ginger and also used the spenda brown sugar. I also served this with frozen asian veggies and skipped the noodles. Very filling and easy meal... — ellie_ Nov 3, 2009

Tomato Taco Soup for the Crock Pot

This was pretty good and a definite change from ordinary tomato soup. I put it on low in the crockpot for 4 hours then my crockpot switches to "warm". The changes I made was using only 32 oz of tomato juice and 16 oz of tomato sauce. I also used... — ellie_ Oct 25, 2009
