Fabulous Tofu With Delicious Nutritional Yeast

Posted by veg head 4-ever

I have been a vegetarian for 16 years and a tofu lover for even longer, yet I had never had tofu prepared this way! It's quite good - and easy and healthy. I think I'll try it cubed next time, and maybe marinate it first. — Ameliahead Nov 9, 2009

Grilled Green Tomatoes & Onions

Posted by Dancer^

I had all of the ingredients for this recipe except caraway seeds, so I went ahead and made it. I was excited that I liked it, having been on a quest for non-fried green tomatoes lately. I used a red onion. It was sweet and delicious. — Ameliahead Nov 9, 2009

Warm Spinach Salad

Posted by LeAnne Conaway

This is very impressive - a nice salad course salad. Delicious, too. I bought fancy whole grain mustard just for this salad and it was totally worth it. — Ameliahead Oct 31, 2009

Roasted Vegetable Medley With Artichoke Hearts and Mushrooms

Posted by Missy Wombat

What a lovely combination of flavors. I did let some of the vegetables brown a bit at the edges, which I like. Loved the olives and sun-dried tomatoes. — Ameliahead Oct 31, 2009

Brie and Red Currant Toast

Posted by PinkCherryBlossom

I can't believe I haven't rated this. I first made it about three years ago! It's amazingly delicious - never knew how much I like red currant jelly - especially with sourdough. It creates a nice contrast in flavors. — Ameliahead Oct 29, 2009

Ww 3 Points - Broiled Persimmon With Pecans

Posted by mariposa13

I made this a few times last year and forgot to rate it; plan to make it again this year - soon. Not tending to keep whipped topping around, I just used light sour cream and mixed it with a little extra brown sugar along with the nutmeg. Quite... — Ameliahead Oct 28, 2009

New Waldorf Salad

This dressing is ingenius. I love how the tahini allows for a creamy consistency without dairy. — Ameliahead Apr 25, 2009

Pecan Barley Salad

Posted by Roosie

Very nice. I already had all of the ingredients other than carrots and shallots, so I omitted the carrots and used extra celery and subbed scallions for shallots. I also added a few rough-chopped dried cranberries, which was a lovely addition.... — Ameliahead Apr 22, 2009

Moroccan Chickpeas and Sweet Potatoes

(1 person found this helpful) Posted by evelyn/athens

Loved it. I pretty much followed the recipe exactly, a rarity for me, although I didn't really measure. The lemon juice is essential to balance out all the sweet flavors. The almonds add a lot, too. I will make this again. — Ameliahead Jan 27, 2009

Wheat Berry Salad With Dried Apricots

(2 people found this helpful) Posted by TasteTester

Outstanding and beautiful, too. I didn't have walnut oil and couldn't justify buying it for one recipe, but I think I will next time I make this (and I will make it again). I can imagine how much flavor it would add. I did add some salt and... — Ameliahead Jan 26, 2009

Caponata

Posted by katie in the UP

This is so good and really pretty easy. My only complaint is that it's a little hard to scoop up on bread cubes, but worth it. I'm sure it's easier to eat with bruschetta, if you're willing to toast the bread. — Ameliahead Dec 12, 2008

Simmered Chili Olives

I made these for Christmas last year and forgot to review! Very tasty. I'm thinking of making them again this year. I actually prefer them warm. — Ameliahead Dec 12, 2008

Spiced Butter Bean, Spinach and Tomato Topping for Jacket Potato

Posted by Kitzy

Cheap, easy, and healthy! My favorite things these days. I had this topping over baked white potatoes, which was good, but I'm thinking of trying it with sweet potatoes next. I also think I will try it with white beans, as they are creamier and... — Ameliahead Oct 19, 2008

Orange Marinated Bean Salad

Posted by dicentra

I love orange dressings! In the interest of minimizing my grocery list, I omitted the carrot and bell pepper and increased the cabbage. It may be even better with all of the ingredients, but I thought it was pretty good the way I made it. This... — Ameliahead Oct 16, 2008

Zucchini Marinata (Marinated Zucchini Salad)

Posted by Cookgirl

Very nice, especially considering its simplicity. I think both the garlic and lemon are essential. It wouldn't be the same with vinegar. I made it just for me and ate some after only a few minutes. It was pretty good, but of course it was even... — Ameliahead Sep 6, 2008

Now don't go "EEEWWW!!" before you try this!

Posted by ThatBobbieGirl

Yum. I used a halved, toasted whole wheat roll. I only used the roll because I had no sliceable bread, but it worked very well. One tomato slice per half fit perfectly! I added salt and pepper, and also green onion at the suggestion of Bergy.... — Ameliahead Sep 4, 2008

Lemony Black-Eyed Pea and Cilantro Salad

Posted by EdsGirlAngie

This is so good. I used a small shallot for the onion and halved grape tomatoes. I also squeezed on extra lemon juice. As much as I love lime, I think this salad is great with lemon and wouldn't be quite as good with lime. — Ameliahead Apr 1, 2008

orecchiette with broccoli rabe

Yum! I can't believe that, foodie that I am, this was the first time I'd had broccoli rabe. It just might be my new favorite veggie, too. I pretty much followed the recipe, although I did cut back on the olive oil considerably. It worked just... — Ameliahead Mar 17, 2008
