Avocado-tequila Linguine

(2 people found this helpful) Posted by EdsGirlAngie

This was great. I made a bunch of changes to the recipe, none of which detracted from the original. I used 1/2 pound of orzo instead of linguini, but used the entire amount of sauce. I added the meat of a whole cut up cooked chicken. Then as a... — MEAN CHEF Apr 21, 2005

Baked Texas Jalapeño Peppers

(3 people found this helpful) Posted by Just Cher

These were good. We actually had them tonight as a side dish. Shelly made half the recipe, but they are pretty rich so we will be having some for snacks. I think the boiling of the peppers knocked out all of the heat unless our jalapenos... — MEAN CHEF Mar 30, 2005

Grilled Cheese, Diner Style

(47 people found this helpful) Posted by Dawnab

Well it's just grilled cheese, but the mayo instead of butter is worth 10 stars. It is sooo much easier and grills the sanwiches to perfection. We made these in a fit of hunger late last night. Shelly made a plain version and I made a couple... — MEAN CHEF Feb 26, 2005

Garlic Ricotta Stuffed Mushrooms

(4 people found this helpful) Posted by riffraff

These wrere very nice and easy to prepare. The garlic flavor was great. Because ricotta cheese is pretty bland, I would punch up the flavor a bit by adding red papper flakes and using percorino cheese instead of parmesan, — MEAN CHEF Feb 21, 2005

Italian Rolled Peppers With Mushrooms and Ricotta

(2 people found this helpful) Posted by Sue L

I made these exactly per the recipe. We used one red, one yellow and one orange pepper. Use a wooden skewer to hold them together and loaded the tops with parmesan. They are great, filling and very easy to make. A good vegetarian meal — MEAN CHEF Feb 2, 2005

Low Carb Pizza

(2 people found this helpful) Posted by Sidd

this was surprisingly good. No it isn't pizza, but for a low carb diet it works well. There is very little egg taste - it is primarily cheesy. — MEAN CHEF Feb 1, 2005

GREAT Garlic Spread

(5 people found this helpful) Posted by spatchcock

Absolutely wonderful. I used 4oz of goat cheese because that was the size of the package - LOL. And I used twp heads of garlic - minus what I nibbled on when it can out of the oven. I love this stuff. You can't go wrong. — MEAN CHEF Dec 27, 2004

White Bean Dip

Used the cumin option. This is very nice alternative to hummus. Takes all of 3 minutes, not counting clean-up. I increased the garlic to a tablespoon. — MEAN CHEF Dec 20, 2004

Marinated Chickpea and Artichoke Salad with Feta

I made this after seeing your picture of the recipe. I love Greek Salad and this a close cousin. I may have put in extra feta cheese and extra olives, but it is fantastic. We are having this tonight in warm pita bread. Oddly, I think this is... — MEAN CHEF Dec 17, 2004

The Perfect Smoky Baba Ghanouj, served in roasted red bell peppers

(3 people found this helpful) Posted by Geri by the Sea

Made this today. Roasted eggplants for 1 hour 15 minutes, did not use tomato, but otherwise followed recipe exactly. The end result was just ok. It was not bursting with flavor, need salt and was generally pretty bland. It may help to grill... — MEAN CHEF Dec 5, 2004

This was so simple ande very tasty.. I had it on crackers, but it would be great on bagels. I added extra garlic and a pich of black pepper. I used a food processor - don't quite see getting it smooth by hand. — MEAN CHEF Nov 21, 2004

Tuscan Soup

(8 people found this helpful) Posted by KelBel

Good basic soup. I made 1/2 the recipe because I was not keen to have leftover soup with potatoes and cream (which I use in place of the evaporated milk). My biggest criticism is that the soup cries out for flavor - Garlic, fennel, basil, pepper... — MEAN CHEF Nov 13, 2004
