4th of July Grilled Salmon *or Chicken!*

Posted by Pèllerin

Delicious! The balsamic vinegar adds an unusual and yummy touch to this otherwise fairly standard Asian marinade. — Jim C. Sep 6, 2009

Lemon Pepper & Mustard Baked Ahi / Mahi Mahi / Salmon

Posted by gloomybear

We loved this, even with frozen mahi-mahi from Trader Joe's. I used maple syrup rather than honey--a little less than suggested here (just our taste)--and it was delicious! Also I didn't have scallions, so I substituted toasted slivered almonds... — Jim C. Sep 6, 2009

Chicken-Penne Salad with Green Beans

Posted by sydsmama

A delicious summer meal, and a great template for improvising. I just made it with chicken sausage and without the pasta, since we had half a baguette from the night before--both good variations. — Jim C. Aug 19, 2009

Salmon w/ roasted Asparagus & Lemon-Caper Sauce

Posted by Sue Freeman

A delicious and easy dish, but elegant enough for company! Just about any light sauce would be good...including something taking it in an Asian direction. — Jim C. May 10, 2009

Chinese Chicken Salad With Spicy Noodles and Sesame Sauce

Delicious! I used two cut-up poached boneless chicken breast halves and added a chopped & lightly steamed zucchini for a great one-dish meal. — Jim C. May 10, 2009

Slow Cooked Italian Stew (Crock Pot)

(1 person found this helpful) Posted by justcallmetoni

Excellent! The herb amounts looked skimpy to me, so I used about a tablespoon of Italian seasoning & was glad that I did. Also, next time I'll try omitting the chicken broth, since there was a lot of extra liquid. A great keeper--thanks! — Jim C. Mar 23, 2009

Sour Cream and Ground Beef Layered Casserole

(1 person found this helpful) Posted by KITTENCAL

We love this and have it often--but the prep time is unrealistic. Chopping the onions and mincing the garlic needs to be counted, and so does browning the meat, shredding the cheese, etc. I find that even if I cook the pasta while the meat mixture... — Jim C. Feb 27, 2009

Yum! This is my all-time favorite way to cook kale on its own...at least so far! — Jim C. Feb 16, 2009

shrimp & scallop ziti

Delicious! I omitted the hot water, which I think would make the sauce too runny--it was perfect without it. And yes, I put the cooked pasta into the baking dish with the sauce. — Jim C. Feb 16, 2009

Teresa's Stuffed Flounder

(1 person found this helpful) Posted by TGirl,RN

We loved this, but I was surprised to find it just a little bit dry--some reviewers complained that it was soggy! Maybe a lot depends on the fish you use. I see that BoxO'Wine poured butter over it...next time I might pour over a combination of... — Jim C. Jan 27, 2009

Fillet Almondine

(1 person found this helpful) Posted by Kendra*

Delicious! This is a keeper for sure. There's a lot of yummy gravy left, so do consider serving it with mashed potatoes or rice. I used straight mushroom soup for a non-dairy version, which is also great a way to make it a lighter dish. — Jim C. Nov 16, 2008

Excellent!! Believe it or not, a light non-dairy version, using ground chicken and soy sour cream & cheese, was delicious too! — Jim C. Oct 19, 2008

Haddock With Fresh Summer Vegetables

(1 person found this helpful) Posted by Baby Kato

This is a delicious dish, and it makes a lovely presentation IF you use a nice firm fish. (The first time I made it I used cod, which the guy at the fish counter said was "the same as haddock"--well, it was tasty all right, but it completely fell... — Jim C. Oct 12, 2008

Orecchiette With Spicy Sausage and Broccoli Rabe

(1 person found this helpful) Posted by Pumpkie

This is insanely good. Heard almost weekly at our house: "Are you tired of that broccoli rabe dish?" "Are you kidding?!?" It's also versatile: use any pasta you like, including tortellini, saute sliced mushrooms along with the garlic, add white... — Jim C. Jul 20, 2008

Fantastic Taco Casserole

(1 person found this helpful) Posted by Leilani

What a find! This is almost infinitely variable--you can add sauteed onions, go for sharp cheddar, substitute ground turkey for a lighter version or sauteed veggies for a vegetarian version, etc. This is going to become a regular at our house. And... — Jim C. Apr 1, 2007
