Vegan Golden Vanilla Cupcakes

Posted by Chef #629158

This is my TNT vanilla cupcake recipe. I use the oil option and it comes out perfect every single time! I also tend to use almond milk as that is generally what is in the fridge. — Xanthia Aug 31, 2009

Rhubarb-Pecan Muffins

I used an egg replacer and it turned out great. I didn't have one, but they were inhaled. — Xanthia Jun 6, 2009

Remarkable Rhubarb Bites

Posted by Dancer^

I loved this recipe. I used an egg replacer instead of an egg and it turned out great. I made them for mother's day and shared with friends as well. I think most people underrate rhubarb! I love it and glad now that my friends and family will... — Xanthia May 16, 2009

S'more Granola Bars

Posted by Hey Jude

I made them vegan with vegan marshmallows and margarine. I had to add water to get them to hold together. Maybe if I had not done the chocolate and marshmallow on one layer and put them throughout they would have held their shape better. — Xanthia May 7, 2009

The Best Apple Pie Muffins Ever

Posted by Dotty2

Great muffin recipe. I made them vegan by using margarine and an egg replacer. I also made a half batch and got 9 fair sized muffins. Adding cinnamon to the batter is a really good idea. A very nice moist muffin. — Xanthia Apr 23, 2009

Healthy Vegan Muffins

Posted by Sandy in California

Not near enough add-ins. They are fine and tasty if you like molasses muffins. The molasses completely dominates the taste of everything else. I highly suggest if you are making these to at least add 1 cup of raisins. — Xanthia Apr 11, 2009

Chocolate Chip Muffins

Posted by Charishma Ramchandani

Very good! I made 6 huge texas sized muffins out of this. I subbed margarine and soy milk but still used the eggs. Next time I'll try an egg replacer. Very easy and a hit with the husband. — Xanthia Feb 21, 2009

Vegan Chocolate Chip Bars

So very very good. I used 1/2 cup of brown sugar out of the sugar total and half soy creamer for the soymilk total. Really tasty. — Xanthia Feb 21, 2009

Nutella Crinkle Cookies

(1 person found this helpful) Posted by Dorel

It was interesting and light compared to a regular chocolate crinkle cookie. I didn't have any hazelnuts so I left them out but next time I would add them in for a nice texture. I veganized them and they turned out very well. — Xanthia Jan 10, 2009

Cranberry Apple Casserole/Crisp

(1 person found this helpful) Posted by ladypit

So very very good. I pretty much doubled the recipe, used margarine and didn't have pecans so I left out the nuts. This is so easy and so darn good. I'll be making this again and again. — Xanthia Nov 27, 2008

Vegan Banana-Chocolate Chip Cake

(1 person found this helpful) Posted by Aunt Cookie

I made this for a Labour Day BBQ and the only one who turned up their nose was a little boy who I think was tired and hated bananas. This cake is dense, and doesn't really need the chocolate ganache I added on top, but my word, it was tasty. My... — Xanthia Sep 2, 2008

Yummy Banana- Oat Bars

Posted by akram

I was in the middle of making these for a coworkers birthday and the panic of "OMG too healthy!" set in so I covered them in chocolate. Funny, it worked and they were eaten with glee. They are really close to my breakfast bar recipe I use which I... — Xanthia Sep 2, 2008

Banana-Wheat Germ Muffins (Vegan)

Posted by Vegan4TheWin

Oh yum! Just one caveat...if you are using good high quality cinnamon, a little less goes a long way. However, the guys who inhaled them (included a banana hater, sheesh, men) weren't phased by the excess cinnamon one bit. The wheat germ was nice... — Xanthia Sep 2, 2008

Vegan Truffles

Posted by Zeke Koch

Wow. These got even better reviews than my standard truffles with vegan cream cheese! They were SO easy and so delicious. I coated some of them in toasted coconut (unsweetened) and added a little bit of coconut flavoring to that bunch. SO VERY GOOD. — Xanthia May 26, 2008

Coconut Chocolate Squares

Posted by Chef PotPie

I didn't sandwich them, and made my own sweetened condensed soymilk (so they are vegan) and these turned out excellent. I think they would have not been so crumbly if I had used 100% flaked coconut, but I had unsweetened as well so I went by the... — Xanthia Apr 22, 2008

Brownies Agave

These turned out really rubbery for me, and it wasn't the spelt flour because I cook with that quite a bit. Too bad, the idea is excellent! — Xanthia Dec 18, 2007

Chocolate Banana Cake

(1 person found this helpful) Posted by Debbb

This was a really good cake. I made it as a birthday cake with a fudgy icing in between the layers and covered in chocolate ganache. I then packed the sides with toasted pecans, which turned out really great! Decadent! — Xanthia Sep 26, 2007
