Gluten Free Sweet Potato Muffins

These had a really nice, moist texture. I would recommend that, since they don't rise, you fill the muffin cups all the way up. Either way, you won't miss the wheat with this one. Even my husband who is "pro-gluten" loved them. — Crisci Nov 1, 2009
