Pickled Peppers With Shallots and Thyme

(1 person found this helpful) Posted by NurseJaney

Delicious! Nice hint of thyme and garlic and something nice to have in the fridge for summer salads. I had my first sample today in a chicken and cheese sandwich for lunch and it made a great addition. — Peter J Nov 9, 2009

Chicken Paprika (Crock Pot)

Posted by Mom2Rose

Very nice! Like a few others I used cream of mushroom soup and added garlic. The sauce was great over steamed rice. While the predominant falvour was the lovely flavour from the reduced mushrooms the paprika added an extra special touch on top. — Peter J Nov 1, 2009

Grilled Teriyaki Salmon

Posted by KITTENCAL

This was great! Really nice teriyaki flavor that beats the bottled version hands down. The sugar gave a slight caramelization effect and it was wonderful along with a light salad. — Peter J Oct 31, 2009

Homemade Fresh Ricotta Cheese

(2 people found this helpful) Posted by Sharon123

I'd never have guessed how quick and easy it is to make your own ricotta! It has a very silky texture that I much prefer to store-bought and the delicate flavor makes it ideal for use with fresh herbs and chopped vegetables. I made the full cream... — Peter J Oct 30, 2009

Basic Fish Cure (Bbq Rub)

Posted by JanuaryBride

Yum! I used it to hot smoke some salmon in a small fish smoker and it came out a treat. I let it sit around 4 hours and it's an ideal recipe for any oily fish, the salt seemed to leech out some of the natural oil to the outside which let it cook... — Peter J Oct 25, 2009

Balmain Bugs (Shrimp) With Mango Sauce

(1 person found this helpful) Posted by evelyn/athens

Simply amazing! I found the posted amounts gave a perfect consistency and loved the sweet flavour of a nice ripe mango with just the hint of sour from the lemon and tang of the chili sauce. Being an Aussie I used Balmain Bugs but the substitutes... — Peter J Oct 25, 2009

Carbonara

Very nice! The egg and cheese gives a great creamy texture without being too rich. Only change I made was to use chorizo instead of pancetta. — Peter J Oct 22, 2009

Smoked Chicken on a Beer Can

Posted by Whipper

Wow this was great! Only change I made was to use sherry instead of brandy because of what I had on hand. Excellent directions and the result was super moist with the perfect amount of smoke flavour. — Peter J Oct 11, 2009

Blue Cheese Topped Grilled Ranch Steak

Yum! Super fast to put together and a great combination of flavours. I cooked using a scotch fillet / ribeye steak and enjoyed with a salad including a few vegetables I grilled along with the steak. — Peter J Oct 10, 2009

Fish Fillets With Lemon and Caper Sauce

Posted by Kiwi Kathy

Loved this! One thing I especially enjoyed was removing the peel and pith from the lemons left a nice lemon flavour without that sort of harshness you can get from the rind sometimes. Only thing I did differently was serve with a salad but I... — Peter J Oct 4, 2009

Barbecued Olive and Pesto Burgers

Posted by katew

Amazingly good! Really bursts with flavour and I served in a bun with a small amount of lettuce, tomato and cube or two of feta. I feel they're best served without too much else so you don't take away from the great taste too much. — Peter J Oct 1, 2009

Yum! Very fresh tasting with a nice tang. I made to use as part of another recipe but enjoyed some over crusty bread as an afternoon snack. — Peter J Oct 1, 2009

Grilled Wasabi Salmon

(1 person found this helpful) Posted by Lorac

Very nice! I used a salmon cutlet and pan-fried because it was a bit cool outside and it came out a treat. I used a little more wasabi powder with the mayonnaise because it was the pure form which is a bit milder, I think the posted quantity would... — Peter J Sep 28, 2009

Chicken & Chorizo Skewers

Posted by **Mandy**

Yum! The chicken and chorizo was a great combination and a very nice marinade as well. I'd originally intended to BBQ it but the weather turned nasty so I pan fried and enjoyed along with a salad. — Peter J Sep 19, 2009

Tomato and Chorizo Salad

Very nice salad that's quick to put together and looks classy as well. I served in some small single serve glassware. It has a really nice tang from the chorizo, onion and lemon which goes nicely with the tomato. — Peter J Sep 18, 2009

Asparagus-Sour Cream-Muffins

Posted by Lalaloula

Yum! I had my mind set on making these and when I found it was a bit early for local asparagus went ahead with a tin that I drained very well and skipped step 1 and they were delicious. Fresh would be better however given the choice. I'm not keen... — Peter J Sep 17, 2009

Make Perfect Ice Tea

Posted by happynana

Very refreshing! I made the unsweetened version and have been squeezing in a little lemon juice before drinking. No sign of cloudiness or bitterness so the baking soda and leaving to cool at room temperature really seems to work. — Peter J Sep 13, 2009

Ramen Foo Yung

Posted by Steve Harper

Yum! I often have boiled egg with my noodles but this made a nice change. I used beef flavour because that's all I had and it tasted great, although a lighter color like chicken as recommended would probably look better. — Peter J Sep 13, 2009

Marinade for Steak (Porterhouse, Sirloin or Any Beef Cuts)

Posted by Chef floWer

Great marinade! I used with a porterhouse and really like marinades that don't need too much time because it suits my usual lack of planning. I marinated for around an hour and it imparted the wonderful flavour of that Asian style ginger / garlic... — Peter J Sep 13, 2009
