Great muffins. To reduce fat, I put in 1/4 c Canola oil, plus 1 Tablespoon Canola oil, and 1/4 c unsweetened applesauce. Great even with the changes. — May A Jul 29, 2006

Great recipe! I add 1 Tablespoon, plus 1 1/2 teaspoons McCormic Clear Imitation Vanilla Extract. I use two lined 9 x 13 baking pans. The layer is thinner, easier to break up, and takes less time to dry. Thanks for sharing. — May A Jul 4, 2006

Excellent! Used canola oil instead of butter for health reasons. For baking, I always use fat free dry milk. Used vanilla sugar. Added a little cincinnom. Used a little more baking powder. I didn't find the batter to be too thick, at all. — May A Sep 24, 2005
