Bacon Feta Stuffed Chicken Breasts

Posted by weekend cooker

This was delicious! I used feta with basil and tomoto, and I used the Italian style tomatoes, to add extra flavor. I think next time I will make this in the oven to be even quicker. — Amber Matlock Jul 14, 2009

Thanksgiving Pumpkin Crunch Cake Dessert

Posted by KITTENCAL

This was sooo good. I made it for Thanksgiving as an alternative to pumpkin pie. It was a little too rich for most of my family though, which is why I'm only giving it 4 stars. — Amber Matlock Feb 9, 2009

Chicken and Rice Soup

Posted by lynxpilot

I ended up making this as "chicken noodle soup" because when it was time to put the rice in I discovered I didn't have any in the pantry! So I added noodles instead and it was great. I added some extra seasoning, and it still didn't have a lot... — Amber Matlock Jan 21, 2008

Lisa's Swirled Chocolate Chip Cookies

Posted by KC_Cooker

I made these with just semi-sweet chips, because that's what I had. Definitely the best cookies I've ever made! This recipe is going in the archives. — Amber Matlock Jan 2, 2008

Spinach Artichoke Dip

I made this for Thanksgiving this year as an appetizer and it was gone before the meal was ready! Definitely a huge hit. I've had several requests for it since then! — Amber Matlock Dec 29, 2007

This always makes 2 balls for me, which is great, because I can freeze one and save it for later. This is always a huge hit and gets compliments every time I make it! — Amber Matlock Dec 29, 2007

I have made this recipe several times now and it's always a hit! In fact, I have won "best salsa" two years in a row at a friend's annual Salsa Party! — Amber Matlock Dec 29, 2007

Chicken Pot Pie

Posted by emily9

This was fantastic! I love chicken pot pie, but all the recipes I had seen before were very complicated. This was so easy, and just as good! — Amber Matlock Mar 13, 2006

M&m's Party Cookies

Posted by MizzNezz

These turned out pretty good. Not the best cookie I've ever had in my life, but very good. I used red and green m&m's for Christmas. I would also suggest using more m&m's than the recipe calls for as I found it to not be quite enough. — Amber Matlock Dec 21, 2005

Chicken Parmesan

Posted by sheryl ripley

I also wanted to add that when I make this, I pound the chicken flat, to make it go further and I also add parmesan cheese to the breadcrumb mixture. — Amber Matlock Jun 20, 2005

Mexican Chicken Chili Soup

Posted by dale!

I made this for a family dinner when my parents came over. It was a huge hit. We all topped it with sour cream, shredded cheese, tortilla chips, and fresh lime juice. YUM. The only thing I did differently was that I boiled the chicken instead... — Amber Matlock May 20, 2005

Spanish Rice

Posted by Rick B(2)

I liked this recipe. Could have used a little more flavor, so I'll probably add some southwest seasoning or something next time, but the overall flavor and texture was good. — Amber Matlock Mar 21, 2005

Mexican Cornbread

Posted by Sonya M

I made this recipe, except for instead of the corn, I added a can of "Savory Sides" that had pinto beans, corn, tomatoes, and green chilis. This gave it a lot of good flavor. I also used my own taco seasoning. I like this recipe because it was... — Amber Matlock Feb 21, 2005

Mexican Rice

Posted by ratherbeswimmin'

This rice would have been excellent except for the too strong celery flavor. I think that if I make this again, I'll try cream of mushroom, or cream of chicken. The celery flavor didn't belong in a mexican dish. — Amber Matlock Feb 18, 2005

Sour Cream Chicken Enchiladas

(1 person found this helpful) Posted by Michelle Bakel

First of all, this only made about 8 enchiladas, but that's not why I'm giving it 3 stars. The flavor was not *bad*, but it wasn't great either. Too "cream of chicken"-y, if that makes sense? I don't know what it needed, but definitely needed... — Amber Matlock Feb 18, 2005

Cilantro Rice

(1 person found this helpful) Posted by Izzy Knight

Good alternative to the traditional spanish rice. Had a good flavor, just not as bold as I would have liked. I think this would be best used in a recipe (like a burrito), not just as a side dish. — Amber Matlock Feb 16, 2005
