I cooked the fish on top of sliced tomatoes and chopped garlic cloves. On top of the fish, I put thinly sliced onion and sprinkled dill weed. Dish was excellent. Served with boiled baby potatoes and garlic beans with pawpaw salsa on the side.... — Larry Jul 27, 2009

Seared Scallops With Herb Butter Sauce

Posted by KathyP53

This recipe is excellent. I left out the salt and added a chopped seeded red chilli and 1 crushed garlic clove to the sauce to our preference and the result was fantastic. Make this if you have fresh/frozen scallops, you won't be disappointed!... — Larry Apr 10, 2009

Excellent recipe! It will become one of our gourmet favourites at our home. I made with one of our large local Aussie mangoes right off the tree and it was suburb. Any more of these treasures Susan? — Larry Jan 12, 2009

Uncle Bill's Salmon Baked or Barbecued in Foil

Posted by William (Uncle Bill) Anatooskin

Bill - Fantastic recipe. I added 2 sliced cloves of garlic in the stuffing since we are garlic freaks. Beautiful, succulent salmon; one of the nicest we have had!!! Used a piece of Tasmanian salmon instead of a whole fish. — Larry Jun 20, 2008

Parmesan and Pine-Nut Crusted Chicken Breasts

This meal was fantastic. I used boneless thigh fillets pounded to a thickness of about 1/2" instead of breasts with great results. I also sprinkled with Parmesan when I put them into the oven. — Larry Mar 19, 2007

Excellent recipe. I cut back on the corn starch as it made the sauce too thick and it worked well. — Larry Feb 17, 2007
