Easy Crowd Pleaser Tuna Cakes

Posted by blisstir

This recipe is amazing! Made using garlic, seasoning salt, dill, white pepper and cayenne. Increased by half and added an extra egg. So crispy outside; moist and tender inside. Will definitely make this again! Thanks for sharing blisstir. — Bev in NY Nov 4, 2009

Tuna, Pickle, and Chopped-Vegetable Pita Sandwiches

(1 person found this helpful) Posted by blucoat

Really good, light summer salad. Didn't have pita and was too lazy to run to the market so, instead, filled sweet pepper halves with the mixture. So yummy! Even environmentally friendly when you use hook caught yellow tail tuna! Thanks for the... — Bev in NY Aug 2, 2009

Pork Chops and Sweet Potatoes

(1 person found this helpful) Posted by GrandmaIsCooking

This recipe was a serendipitous find. I just happened to have sweet potatoes and the DH wanted pork chops. I did a couple of substitutions - used Blackberry Jam (didn't have any currant jelly) and added dried currants, and added a pinch of... — Bev in NY Mar 22, 2009

Fricassee of Game Hen With Creamy Leeks and Vadouvan

Even though this recipe takes some time and effort, it is really worth it. Wonderful, bold flavor with just enough spice to make it interesting. Served with simple brown rice steamed with chicken broth and broccoli. Added bonus; the leftover... — Bev in NY Sep 28, 2008

Carnitas

(1 person found this helpful) Posted by katie in the UP

This was so easy. I love preparing and eating (mostly the eating part) Hispanic foods. Made this using a pork loin roast. Used the Carnitas for burritos and as a meat dish with rice. Was absolutely wonderful! — Bev in NY Sep 15, 2008

Scancan is the greatest cook ever! This is the second recipe of hers that I tried and it was awesome!!! Anyway, I didn't use bell pepper (not my favorite) and didn't have any wasabi in my cupboard so had to make due with a fresh jalapeno. Still... — Bev in NY Sep 15, 2008

What a great dish! Didn't make any changes at all. Served it with steamed cauliflower and sauteed potatoes. Couldn't ask for a more satisfying dinner. Thanks Celtic! — Bev in NY Sep 8, 2008

Antipasto-Style White Bean Salad

Posted by Sephardi Kitchen

Really great main dish salad. Made a few changes because I just can't leave well enough alone. Used Fava beans and Chick peas rather than navy - just cuz they are fun. Other than that, served it with Ciabatta for a wonderful summer meal.... — Bev in NY Sep 8, 2008

Salad Olé

Muy Fantastico!!!! This is the easiest and possibly the best, most flavorful salad out there. I added a layer of finely chopped romaine to the mix and used Paul Newman's Peach Salsa for the dressing. It got rave reviews from my guys and... — Bev in NY Sep 4, 2008

Crab Granicio (Italian)

Posted by MadCity Dale

Very good recipe for Krab! Rather than use all butter, I used half the amount in extra virgin olive oil. Added a bit of salt and white pepper for added flavor. Served with sour dough and a spinach and mushroom salad. Awesome meal! — Bev in NY Aug 11, 2008

This was absolutely awesome! Purchased so much calamari that we shared it with the cafe crowd and it got rave reviews from everyone. The method of doing the bound breading was the easiest and least messy ever. Made clean up simple. Will... — Bev in NY Aug 10, 2008

Crock Pot Chicken W/ Black Beans and Cream Cheese...yum!

Posted by Jen Santiago

Awesome recipe! I shredded the chicken and made a "taco" salad using the CrockPot Chicken as the topping. Used Paul Newman's Peach Salsa which gave it a sweetish flavor that complimented the chicken nicely. Lots of leftovers too. Great... — Bev in NY Aug 4, 2008

Tuna Noodle Casserole

Posted by Aligobs

This was one of the best tuna casseroles I have ever tasted! Very easy to prepare and great for the beginning cook. The only change I made was the addition of 1/4 cup of cream to make it a bit more moist, along with salt and pepper to taste.... — Bev in NY Dec 9, 2007

Classic Fish and Chips

Posted by ~Patrish

I would have rated this recipe as 5 star but I had a slight problem with the batter. It would not stick to the fish. What did stick was fabulous! I will make it again but will dredge the fish in flour like a bound breading, before dipping it... — Bev in NY Dec 8, 2007

Alcatra ( Portuguese Pot Roast With Wine, Bacon & Garlic)

This was absolutely wonderful! Reminded me of why I love the Iberian Peninsula and the local cooking! I sauted the bacon in slices and then crumbled (easier for me) and chopped the onion really fine. Didn't use the olive oil as the bacon rendered... — Bev in NY Jan 27, 2005

Yorkshire Spice Bread for the a B M

(1 person found this helpful) Posted by Cookgirl

Wonderful dense crumb on this bread! The only problem was we didn't have any left over for french toast! Now I have to make another loaf. The only changes I made were for high altitude - less yeast, a little more liquid, and a teaspoon of gluten. — Bev in NY Nov 4, 2004

Peggy's Favorite Summer Squash Bake

(1 person found this helpful) Posted by Aunt Willie

This recipe is a wonderful way to prepare that excess summer squash and was relatively easy to make. The onion seemed to overpower the delicate flavor of the squash however, and I even cut it back by half. Next time I will only use 1/4 cup of... — Bev in NY Oct 2, 2004

This was very easy to prepare. A good, quick, easy clean-up meal. The only problem I had was it didn't stay warm enough for me to finish my meal. Excellent with Peggy's Favorite Summer Squash Bake and a baked potato and salad. — Bev in NY Oct 2, 2004
