Creamy Pea Salad

(1 person found this helpful) Posted by Theresa/ Thunderbird

Oh, my, this is delicious...I made it simpler by adding 1 cup of colby jack cheese instead of the other kinds. I used a red onion and fresh bacon. Only used 3/4 cup mayo (best foods) and it was plenty creamy. Served it on a bed of romaine lettuce. — Lisa Eberhardt Nov 9, 2009

Crumb Topped Banana Muffins

Posted by MizzNezz

These are fluffy, tender and flavorful. Used oats instead of nuts in the topping and turned out great. Next time I will reduce or eliminate the salt because they are a little bit too salty. — Lisa Eberhardt Jul 13, 2009

Porcupine Meatballs

(1 person found this helpful) Posted by ChipotleChick

These were okay. The tomato soup gave it good flavor, but it still seemed to be bland. Some of the rice didn't cook completely and was kind of crunchy, maybe because I used brown rice instead of long grain. I ended up eating most of it myself... — Lisa Eberhardt Nov 21, 2007

Chocolate Cherry Chewies

(1 person found this helpful) Posted by Chris from Kansas

This is a neat little gem of a recipe. It only made about 24 cookies, partly because I didn't have any choc. chips and partly because I made them pretty good-sized. It was so simple to throw together. They taste rich, chewey and chocolatey. — Lisa Eberhardt Jul 24, 2007

Pumpkin Muffins

(1 person found this helpful) Posted by ratherbeswimmin'

I've made these 3 times in a week! Everyone loves them. Used canned pumpkin and oil instead of shortening. They are moist & flavorful. Though they taste great straight from the oven, they are still just as good if left out a day or 2. — Lisa Eberhardt Apr 19, 2007

Lemon Cooler Cookies

(6 people found this helpful) Posted by Theresa/ Thunderbird

This reminds me of the Lemon Coolers I used to eat when I was younger...they are light and have a touch of lemon zing to them. These got lots of comments when I made them for a crowd...they all thought the cookies had fresh lemon in them. — Lisa Eberhardt Mar 19, 2007

These are the best lemon squares I have ever made. The texture, flavor, and appearance are all perfect! One hint: I had trouble pressing the base into the pan because it kept sticking to my fingers, so I dipped my fingers in flour each time the... — Lisa Eberhardt Jan 22, 2007

Baked Citrus Mahi Mahi

(1 person found this helpful) Posted by *Parsley*

What an excellent and tasty way to prepare the mahi mahi. I've never made it before, and was disappointed that it was tough, not tender, but maybe that is just the way mahi is, as opposed to other seafood I've made. — Lisa Eberhardt Nov 29, 2006

The instructions were so helpful as I didn't have a clue how to make make tortillas. They taste great fresh off the skillet, but I used them to make enchiladas, which we will have for dinner tonight. The texture is perfect. — Lisa Eberhardt Nov 4, 2006
