Garden Vegetable Quiche

(1 person found this helpful) Posted by ellie_

So good! I did have to change a few things based on what I had on hand. I sauteed a red pepper with the onions, mushrooms, and garlic, lined the shell with broccoli instead of asparagus, and omitted the carrots. We will have it again and again!... — Jill Jump Jul 9, 2009

Tuna Casserole

I've made this twice now. Once exactly as written and once with fresh chopped baby spinach and chicken in place of tuna. I topped with crushed ritz. It's magnificent both ways....a definite keeper! — Jill Jump Jan 12, 2006

No-Bake Chocolate Oatmeal Cookies

(4 people found this helpful) Posted by Jenny White

YUM!! My mom has been making these for years. We use 3 3/4 cups oatmeal, and they come out perfectly in my opinion. The consistency does depend on the weather as well, as the poster comments. I've also made these without the cocoa for a yummy... — Jill Jump Oct 11, 2005

Baked Salmon

(1 person found this helpful) Posted by Tammywood

We have this salmon at least once a week. It's so simple and so yummy. When I'm really pressed for time , I skip the marinating and use lemon pepper and garlic salt instead of salt, garlic cloves, pepper, and lemon juice. Comes out scrumptious! — Jill Jump Sep 2, 2005

This was a very good (and somewhat healthy) breakfast. I used frozen blueberries, raspberries and blackberries and whole wheat flour. I also substituted finely chopped walnuts in the topping. There was a berry in every bite - yummy! — Jill Jump Jul 7, 2005

This was delicious! I used thin tilapia fillets and found that 4 minutes on each side over medium heat was perfect. I also substituted sour cream for the yogurt and used fine italian style bread crumbs. We'll be having this again and again! — Jill Jump Jul 7, 2005

Oven-Fried Chicken Chimichangas

(2 people found this helpful) Posted by Miss Annie

This is the perfect chimichanga recipe! I often order chimichangas, and these were definitely restaurant quality. The only change I made was to use chili powder instead of cumin since I didn't have any on hand. I also melted some extra cheese... — Jill Jump May 10, 2005
