Tried this tonight with 1 lb. chicken tenders, and used about 1/2" oil in a cast iron skillet. Did two batches...kept 1st half in a 150 deg. oven while frying the other half. It tasted great!!! Thanks! — bottlewasher Aug 20, 2009
