Pumpkin Ravioli in Brown Butter

Posted by Veghead

I cooked two ways. Boiling created pasty, flimsy, limp ravioli that fell apart and looked like slime. Pan frying in brown butter created firm, tasty, visually-appealing ravioli. Flavor was excellent. — Spencer #2 Nov 2, 2009

Sweet Acorn Squash And Apple Soup

(1 person found this helpful) Posted by ~Rita~

Excellent fall soup. I served it hot with a dollop of sour cream for a Harvest dinner. The apple really adds something special to the flavor. This goes into the "Definitely make again" category. — Spencer #2 Nov 2, 2009

These went over well. I used home canned blueberry pie topping. — Spencer #2 Aug 6, 2009

Carrots and Sugar Snap Peas

Wasn't bad but nothing too special either. Suggestions of spices to liven it up would be helpful. — Spencer #2 Aug 6, 2009

Green Beans 'n Fennel

(1 person found this helpful) Posted by Bergy

I was hesitant about adding a tomato sauce to green beans but the flavors complimented each other well. This is an excellent way to add some zip to otherwise plain boiled green beans. — Spencer #2 Aug 6, 2009

Easy Veggie Salad With Asian Dressing

Posted by **Tinkerbell**

Crunchy, healthy and tasty. I substituted cooking sherry for the rice wine vinegar because it was all I had and it was good. — Spencer #2 Aug 6, 2009

Quiche

This is an excellent basic quiche recipe. Start with this and adjust and add items as desired. I baked just over one hour and it was done perfectly. — Spencer #2 Aug 6, 2009

Puffed Pancake with Strawberries

Posted by ~Leanne~

This should have been better but just wasn't. I baked it for twice the suggested cooking time and still had runny eggs in the middle. I was expecting it to resemble a pancake and it was definitely more like a custard. — Spencer #2 Aug 6, 2009

Melon Salad With Orange-Lime Dressing

Good zippy flavor to the fruit. It is a healthy alternative to creamy fruit dressings. — Spencer #2 Aug 6, 2009

Awesome! Best pork recipe I have ever tried. I used Feta cheese and pork was full of flavor, tender and moist. — Spencer #2 Aug 6, 2009

Cooking Light's Citrus Chicken Cutlets

Posted by blucoat

Good citrus flavor- not too much or too little. I only gave 4 stars because my husband complained that the chicken was too dry. What does he expect from a healthy low-fat, low-carb recipe? — Spencer #2 May 15, 2009

Saag Tofu (Indian Tofu With Spinach)

(2 people found this helpful) Posted by blucoat

Excellent mild curry flavor. I will make again. The yogurt sauce was a good consistency until I heated it. Then it turned very watery. I would have preferred it to stay a little thicker. — Spencer #2 Apr 27, 2009

African Peanut Soup With Mustard Greens

Posted by Mysterygirl

Good soup. The peanut butter gives it a unique taste for soup. I omitted the couscous to save to on carbs and the olive oil to save on fat. I would definitely make again. — Spencer #2 Apr 9, 2009

Little dry and bland but not bad. The bok choy had a wonderful flavor. Probably won't make again. — Spencer #2 Apr 5, 2009

Tibetan Greens With Tofu (Tse Tofu)

Posted by Elmotoo

Excellent. Jam packed with good nutrition value. I cooked the greens until they were wilted- this takes much longer than 30 seconds. Closer to 6-8 minutes. At 30 seconds, they would not even be heated, let alone cooked. I used 2 blocks of tofu... — Spencer #2 Apr 3, 2009

I omited the ginger because the flavor seems too strong. Otherwise it is a good pork dish with a savory sauce. — Spencer #2 Mar 24, 2009

South Beach Muffin

Posted by *Pixie*

I really tried this with an open mind. I didn't expect a regular muffin. I knew it would taste like diet food. I forced myself to eat a few bites to give it a good try. But I hated it and won't make it again. — Spencer #2 Feb 9, 2009
