I used whole wheat flour and half the sugar. Also used half applesauce for the oil. Subbed raisins for the nuts. Doubled zucchini. Delicious. I think you could get by with less vanilla, if you don't have that much left in your bottle. Very yummy. — Chef #1040203 Jul 28, 2009
