RECIPE: 500°f Eye-Of-Round Roast

Wow... this worked. I even got worried about the cooking temp (because I was stupid and didn't put the meat therm in before I stuck it in the oven) and re-baked it to a high enough temp for my liking, and it still turned out - maybe not as tender...
