I am using 102 OZ of canned crushed tomatoes to make salsa to be canned. Do I still need to add vinegar to this recipe and if so, will this change the taste of my recipe? I do not want a sour flavor.

RECIPE: Fillet of Pork With Mussels (Lomo De Porco Com Amêijoas)
We REALLY loved this. I felt quite decadent having such a delicious meal and no guests. Definitely a dinner party quality dish. I served it with baked kumara chips and sauteed chokos for a very Kiwi version of a Portuguese dish!

***** I added some cream to make the sauce like Bonefish Grill. This was terrific and not hard to make. I cheat and buy my mussels at the fishmart and they can even clean them for you.
