Is there any acceptable substitute for madeira? I have a salmon receipe that calls for 1/4 cup. The salmon will be baked and include mushrooms, parsley and cream so I would assume it would be best with a drier madeira. I'd appreciate your suggestions.

RECIPE: Amy's Potato Soup (Crock Pot or Stove Top)
This is a very good base recipe to build from. Since I'm a vegetarian I made some tweaks — traded the bouillon cubes and water for low-sodium veggie stock. I also threw in some carrots and peas to up the nutrients and stuck with plain ol' butter...

This recipe is a keeper!! Delicious and very moist. My DH ate one bread in one day. He loved it and my son too. Thanks for the recipe, I will do again as soon as the bananas are black
