Can anyone walk me through how to cut a fish? I am sure there is a name for the process, but I don't know it. Iwant to keep the skin, tail and head intact, but open it to season and bake it. It's short notice, but I wanted it for dinner tonight. Any help would be appreciated Thanks.

RECIPE: Broiled Salmon With Herb Mustard Glaze
I thought this was good. But my husband, who never REALLY compliments my cooking (usually says, "it was good") actually asked what I put on the salmon. He said, it was really good! So take that for what it's worth!
