I made my first batch of bagels the other night and they came out great! I however I was having a very hard time mixing in the cinnamon sugar and raisins after the yeast had risen. Can I mix ingredients into the dough before I let it rise or does it have to be after? Also, does anyone know any...

I tried this recipe initially to share with some vegan friends. I love this recipe and have used it several times now, even though I'm not vegan/vegetarian.
Easy to prepare, a big hit with everyone who's tried it, and still works great...
