Is there any acceptable substitute for madeira? I have a salmon receipe that calls for 1/4 cup. The salmon will be baked and include mushrooms, parsley and cream so I would assume it would be best with a drier madeira. I'd appreciate your suggestions.

RECIPE: Corn Casserole (Paula Deen)
Wow, this is incredibly impressive I loved it! Perfect alongside some southern fried chicken. It is incredibly rich however and I can normally eat very rich things. I would never add an egg because the texture I found to be a joy the way it was....

RECIPE: Pizza on a Bread
Yummy. I used ready made pizza bread as Turkish bread is N/A, and I didn't have the time to make some. Made my own tomato sauce with oregano, but I left the corn out.A lot of garlic,mushrooms, green pepper, tomato and cheese were my toppings.

RECIPE: 30 Minute Smoked Sausage and Corn Chowder
We spiced it up some with garlic and italian seasoning, but the family loved it! Our picky three year old had his bowl gone before I could even sit down and was asking for seconds.
