Hi,
I am wondering what are the general rules of making chewy cookies. Sometimes I like to play around with recipes due to diet or what is on hand, and I would like to know what are the factors that create that wonderful chewiness that I love about cookies.

RECIPE: Lemon Tea Cookies
The filling on these cookies is about the best lemon flavor ever. The cookies themselves are very delicate. It does take 25 minutes of constant stirring while the filling is cooking so that is kind of a pain but apart from that they're wonderful.

Yummy! These didn't last long. Used Penzey's cocoa and all semisweet chocolate chips and found the cookies very chocolatey. Tender inside but crisp outside. Thanks for sharing the recipe!

RECIPE: Cherry Mash Bars
This is SOOO GOOD ! I actually prefer less chocolate so i used 3 oz. semi sweet and half cup peanuts, much better than store bought. I just realized I forgot to add the peanut butter, I may try it next time but it was not missed at all this time...
