Hi, I want to try to learn to cook some Caribbean dishes. (I'm an OK cook and know my way around a kitchen somewhat.)
What I'd like to know is, what are some dishes that you feel would be good for a newbie to get his feet wet with?

RECIPE: Plantain Baked in Orange Juice (Trinidad)

I made this as directed except I used thai chile sauce instead of regular cocktail style chili sauce to add some kick. The hubby and kids liked them a lot, though they preferred Asian style a bit more. Still an easy recipe that's nice for a change...

We loved these! Especially the dipping sauce. It's flavor is really unique. I fried the onion rings in my deep fryer for 2 minutes each batch & served with 3 different sauces but the Lime Dipping Sauce reccomended was the only one that we liked...
