Is there any acceptable substitute for madeira? I have a salmon receipe that calls for 1/4 cup. The salmon will be baked and include mushrooms, parsley and cream so I would assume it would be best with a drier madeira. I'd appreciate your suggestions.

RECIPE: Steamed Broccoli With Garlic and Bread Crumbs
Very nice dish with lots of flavor. I used Italian bread crumbs that we enjoyed. I think next time, I'll wait and add the garlic when the bread crumbs have browned a little. It got a little bitter. Thanks for a new way to enjoy steamed...

This is great for lunch and dinner too!! However, I like mine with a little punch so I serve with salsa instead of ketchup.
