Very light and moist. The kids loved it for breakfast. I used half oil and half applesauce so I cut back on the sugar (1/2 c.) to keep it from being too sweet. Thanks for sharing this variation of the traditional cinnamon version.

RECIPE: Amish Baked Oatmeal
This recipe is VERY forgiving - at the last minute, I realized I only had a cup and a half of oatmeal! I also substituted low-fat butter and milk, and it still turned out perfect!
