RECIPE: Hot Lemon Rum Toddy
I was looking for a good Toddy recipe and this fit the bill perfectly. Like the other reviewer I had to use ground, non-fresh spices, but it worked out great still. I also used whiskey as I really dislike rum. I read the recipe wrong and started with 2 tbsp of butter so ended up with quite a bit in the end. I made some for me and then with only 2 tsp of whiskey for my boys. They really enjoyed the taste of it. With the leftovers I've put in a dash of cayenne, really warms it up and is so good for a sore throat, thanks for a great recipe !

RECIPE: Peanut Butter Oat Squares
OK, this is difficult because as I made the recipe I realized there are basically no directions. So I improvised. I creamed the sugars, peanut butter and shortening. Then I added the eggs & extracts. Sifted together the dry ingredients and added to wet. There is no temperature for the oven--I used 350 degrees. The directions say "bake on cookie sheet." How? Mold it, spread it? I used a 9x9 pan (looking at similar recipes) and I should have used a 9x13; it was too thick to bake well. The recipe has potential; it tasted good albeit a bit dry because of the amount of time I needed to bake it (30 minutes or more). It needs some clarification. I'll try it again, though. Made for 3 Chefs November 2009.

RECIPE: Peanut Butter Icing
A very good peanut butter icing. A little sweet though I wonder if skim milk powder or cream cheese could be substitued and work well and tone down the sweetness. I was short 1/2 cup icing sugar and still had to use 6 tbsp of cream to get it to spreadable consistency. I could've used more. Also, if it was whipped for a while I'm sure it would have a fluffier texture. So many ideas from one great recipe. I used it on banana cake.
