This was good but I think that next time I'll skip the peppers as I didn't really care for them. I will also use beef broth instead of the bouillion to reduce some of the saltiness. We're neither one into salt that much.

I chose this for the ZWT game, it's a wonderful hearty soup with lots of flavor, I made mine on top of the stove and sauteed onions and garlic before adding in the other ingredients, I used beef broth in place of water and omitted the boulllon cubes, thanks for sharing Paula!...Kitten

Fabulous and could not be easier! The aromas that filled the house while this stew was cooking were incredible. The soup is hearty and flavorful. I used red pepper instead of green and frozen mixed veggies. I also used a new beef bouillon that proclaims to have more beef taste and less salt. This was perfect for the lunch thermos on a very cold winters day! Thanks Paula!!!

Great hearty soup, for a cold winter day. I substituted the boulion for 32oz container of beef broth. To spice it up a bit, I used a pinch or two of red pepper

Loved this soup - perfect for a cold winter night - very easy to make too. I substituted the water and beef bouillion for 32 oz container of beef broth. This is a keeper.

I love vegetable soup and this one will be another favorite! I used cauliflower, broccoli, and carrots for the vegetables and added vegetable broth instead of beef bouillion. Really enjoyed the addition of the barley. Thank you Paula!

I put this together before work, got home to a wonderful smell...of soup ready to eat!! I used up all the fresh veggies in the house..you name it...it was in there! Thanks for a great soup!

Delicious and the house smelled so good when I walked in the door! I made a few changes based on what was on hand by using1 whole red bell pepper, one onion, 2 bouillion cubes, 4 chopped tomatoes (instead of canned tomatoes) and 1 (12 oz) can vegetable juice (sort-of like V-8), a 16 oz can of tomatoe sauce (instead of the 8-oz can specified)--still with all these changes this was absolutely wonderful! I am bringing some to work tomorrow for a wonderful hot lunch! Thanks for sharing this keeper which we will be having often!

What a hearty soup. Served for dinner with crusty bread. Having it for lunch today.Used liquid beef broth.

I made this for my mother who just had back surgery. It was very easy to make and tasted great! The only difference is that I cooked it on the stove for 4-5 hours on low. Thanks!!
