This is a GREAT recipe--one that my picky 12-year-old begs for at least once a week. It makes a big batch, but the leftovers are always gone quickly--it reheats great. We toned down the spiciness a bit--we cut the creole seasoning and cayenne pepper in half and ommitted the serrano chile. (We made it full strength the first time and it was a bit much for our wimpy tastebuds). It still has enough heat to satisfy. Very easy to make, and is now our family favorite.

we omitted the serrano because our grocery store near here didn't have em and i had some leftover chorizo so i added that with a pound of the smoked sausage. turned out GREAT, needed to add a little extra chicken broth though. thanks for the recipe!

This was so easy and tasty, I added some chicken thighs(skinless) and had to add more chicken stock as it was cooking, probably doubling up on the amount of stock .Definately a family pleaser.

Okay....this is a definite keeper! I made this dish tonight using what I had in the cupboard....had to substitute honey garlic sausage, and used fresh tomatoes. But the results were wonderful. I also cut the amounts in 1/2 to feed 4. Everything worked out great. Will make this again...and again. My DH is coming home soon for dinner and I know that he will wolf this down in a heartbeat...and look for seconds ! Thanks Grace.....I love a one pot meal !

OUTSTANDING. Omitted the celery (not a fan) and used chili powder instead of the serrano chili, probably 2 tsp. Very very good and very very spicy.

Very, very good! I made as directed, omitting the serrano chili pepper (personal taste) and used a yellow bell pepper as that was what I had on hand. This was such a nice change from our usual fare that I know I will be making this again soon! DH took leftovers in his lunch same night (that rarely happens!) so I know he gives this 5 stars as well. Thanks Grace for a winning recipe!

This is absolutely phenomenal!!!! My family couldn't get enough of it — they went for 3rds! We didn't add the serrano chili pepper, as we didn't have it on hand, and we also used hot Italian sausage rather than what is called for. Also we added in some shrimp at the end. All in all, we will make this again and again; it's a definite 5 + star!

Super tasty and spicey. I loved it!I did change the gravy to a brown gravy instead of the tomatoe base, and I added chicken. I served the rice seperately with mixture on top and a color blend of sauted red, yellow, orange and green bell peppers on the side.Everything else stayed the same. With these few changes,I'd do it just the same again and again. LOVE, LOVE ,LOVE! Thanx!

Delicious! I used smoked deer sausage and fresh stock made with the leftover Thanksgiving turkey carcass. I also used fresh tomato and thyme instead of canned/dried. Otherwise I followed the recipe. It was a nice spicy dish with tons of flavor. This will be going in my "Favorites" cookbook.
