turn this recipe up a few notches....I used 1/2 c of brown sugar and the remainder left as white sugar, increased the cinnamon to 4 teaspoons added 1 tsp freshly ground nutmeg increased the vanilla to 4 teaspoons....it was fantastic!...made sure to cook till just barely done...to make sure it was extra moist!

The flavor of this bread combines my two favorites! This bread is so moist and delicious, I am unable to decide which flavor is more pronounced, the banana or the zucchini. I believe this is a winning combination and it works so well, I do not know why I have not seen banana and zucchini together in a recipe before! I changed the steps ever so slightly. I beat the moist ingredients until light and fluffy, then combined the dry together and added all at once, leaving the nuts, banana and zucchini at the end. I added 1 16oz bag of semi-sweet chocolate chips to this recipe and everyone thinks that it should be boxed up and sold. Super easy recipe that works for muffins and a glass 8x8 inch pan. Thanks for having everyone think I'm a cooking goddess!

My kids LOVE this! My son wouldn't eat the muffins the 1st time I made them because he saw the zucchini bits. The next time I made it, I added a bag of chocolate chips to camouflage the zucchini, and he couldn't eat them fast enough! Try 1/2 c. oil and 1/2 c. applesauce...they're perfect

This is absolutely the BEST bread I have ever made. This recipe will be replacing all of my other bread recipe immediately. I also added a half cup of raisins, and it was WONDERFUL! Don't hesitate to try this one!

I'm replacing my old recipe with this one! My family doesn't like any kind of nuts in their desserts so I added chocolate chips instead. It was absolutely outrageous! Very moist. Best eaten when still warm.Thanks Margo

Awsome, Awsome, Awsome! My family really enjoyed this recipe. Great way to get rid of all the zucchini that comes my way this time of year. The only alterations I made was using 1C sugar and 1/2 cup brown sugar. I also used mini loaf pan.

Very good, moist bread. I used zucchini that I had grated and frozen (eliminating most, but not all, of the liquid as it defrosted). I left Hubby in charge of stirring in the pecans, and I think that he added a bit more than a cup. My bread was very nutty. LOL
