Awesome IS the word for this, I made this for a Sunday brunch, and had raves reviews from everyone! there was not a spec left. I doubled the recipe but used only 5 eggs, and made it in a 13x9 baking pan. This was a big hit of my brunch! Another winner by KITTENCAL! thanks.

Yummy! I used 3 eggs, skim milk and more parmesan cheese than cheddar. I only used about 1/2 cup cheddar. I didn't top the casserole with cheese, and it still formed a nice crust. Very fragrant dish!

This was awesome! Our whole family loved this dish. The only thing I did differently was to use fresh spinach, and top it all with cheddar as I ran out of parmesan, although I am sure the parmesan would have been even better. This will be a regular in our home. Thanks for another keeper Kitten!

Very good!! My only change in the future will be to saute the onion & garlic in some oil or butter to get rid of the "raw" taste. I may even add another package of spinach just for our tastes.

Hubby, who is the spinach lover in our house, gave the rating for this dish but ........ at this rate, you just might convert me! I scaled the recipe in half, steamed some fresh baby spinach ........ then I followed the directions. Thanx Carol!

BRUNCH, LUNCH, SUPPER, MIDNITE SNACK — it doesn't matter because this dish is more than worthwhile anytime! I knew this was going to be good when I saw the ingredients. I knew it was going to be great when I had it in the oven and the savory aroma was permeating my house. But I was wrong on both counts: It was INCREDIBLE!!! It's like having all that great spinach-artichoke dip (even though there are no artichokes in this dish.....yet) that you dip home made crusty bread into, except that this is a side dish or, light main dish, so you can just eat it like I did — like a hog. Yes, I gorged myself — it was sinful, actually. I'm certain that The Old Testament would strictly ban anything this delicious. In any case, this recipe is a GRAND SLAM. Don't fail to try this innovative and tasteful dish if you want some great food and, if you want to be branded as a genius by your family. One tip: Kitz says to use salt, pepper and cayenne to season the ingredients, which I did, but instead of black pepper, I used WHITE pepper which has just the perfect little "edge" to complement the elegant ambiance of this dish.... about 1/8 to 1/4 teaspoonful — not too much! Kitz for President, that's what I say!

Very good!!! I used leftover white Basmati Rice, 2 (240 g)packages of frozen spinach, and shredded mozzarella instead of cheddar and/or swiss cheese. I was debating on whether to add an extra egg, but glad I didn't, texture was perfect. Cooked covered for 20 mins, added extra mozzarella and baked uncovered for an additional 10 minutes. This really was a nice change to plain white rice. The first words out of my 15 year old daughter's mouth was "never make plain rice again". She loved it. Then when my 17 year old daughter tried it, she loved it. The flavor was delicious. This will definitely make our favorite list. Thanks Kittencal.

I made this last night and wow! The only thing I did a bit differently was I grated the onion and pretty much just ended up adding onion puree. Have to sneak onion by some folks:LOL: I forgot to add cheese to the top near the end but it didn't need it. So delicious! I used organic white rice cooked with chicken broth. I'm not a big cayenne user but this does benefit from the littel zing it adds to the overall richness. Oh, I didn't cook the frozen thawed spinach as its already cooked before freezing--just squeezed it dry and used it from there. This is a winner and goes in the All Star Zaar Chef cookbook

This is soooooo good! I will definitely make this again. One good way to get the family to eat spinach. The leftovers were even devoured for breakfast.
