This was very good! We made this a few times and I substituted the oregano with some greek seasoning. Very tasty and definitely a keeper! Thank you for posting your recipe!

Excellent! I was looking for something that would go well with grilled tuna steaks. I found this and I'm glad I did. I had all of the ingredients on hand, save a red onion so I subbed shallots. Other than that I went by-the-book. Judging from the way it went with the tuna I think it should also go well with pork or lamb kabob. I keep comeing back to grilled entres, I think that might be because this sidedish is so quick and easy to prepare, that it goes perfect with summer grilling. I will do a lot of happy experimentation with this one. Thanx for posting this great recipe. Pierre

This is so good. Will be making this forever more. A great colorful salad. I used vegetable broth. I also added 1/2 cup lightly toasted pine nuts,1/4 cup chopped fresh parsley, and 1/4 cup green onions. YUM! Thanks kittencal.

I used whole grain couscous which required actual cooking on the stove top, but other than that I followed your recipe. I really didn't like it, because the fresh veggies were weird warm. My husband thoroughly enjoyed it and wants me to make it again soon.

I found this recipe a couple years ago in Cooking Light. It is fantastic! I just made it again today. I leave out the olive oil and douse each serving with balsamic vinegar. YUM.

Delicious! I love this couscous dish. I made it exactly as the recipe states; it turned out great with lots of flavor. It is a lovely little side dish or nice meatless main. Thanks!

My mom just made some couscous and we were thinking of stuff to add to it, so I found this recipe on recipezaar. We substituted fresh basil for dried oregano, we didn't have tomatoes or cucumbers, we had blue cheese (not feta), added black olives, we didn't add the onion (personal taste), but we did have some chickpeas. She mixed up the dressing per these directions. We Loved It!

okay another to-die-for recipe, this was made and served with your Kittencal's Greek Souvlaki (Grilled Skewered Lamb or Pork) it was better than any Greek restaurant I made both for a Greek-themed barbecue, thank you for posting you wonderful recipes Kit.

We love Greek food at our house, and this couscous was delicious. I made as instructed, except I left out the chickpeas, as they are not one of my favorite things. This was the perfect addition to our meal. Excellent!
