Mmmm... These enchiladas are delicious! Actually, I joined Zaar after making these three times so I could post the review, and I tell about this recipe to anybody who will listen. The texture and the blend of flavors are just perfect, and the leftovers are as good the next day. Thanks.

I used the sauce from Ground Beef Enchiladas, and made a few changes...adding mushrooms, celery and green peppers in place of the spinach. These were awesome. Thanks!

I made this with left-over turkey from Thanksgiving instead of the ground turkey. The enchiladas were delicious and everyone agreed it was a great use of the leftovers. Will keep this one in mind for after Christmas too!!

Great recipe! I even got my fiancee who hates spinach to eat these and he enjoyed them a lot! You can't really taste the spinach in them or tell that it's ground turkey.. but they sure are good! Next time I'll use reduced fat cream cheese to make it a little healthier. It made so much filling that I ran out room in the pan for more tortillas. Next time I'll put in a larger pan. Thanks for the recipe Kittencal!

We really enjoyed this recipe. It is definitely not a "typical" enchilada. It was really delicious, very filling, easy to make, and healthy too! I will definitely add this to my list of regular recipes!

I honestly would not change a thing! I did find that for the absolute best results, you can broil the enchiladas for 4 minutes after adding the cheese for a nicely baked and browned cheese finish. These are amazing and our neighbors stole the recipe they loved it so much!!!!!!!

I have made this dish three times now, and each time was a hit! Two of the times I had no picante sauce but plenty of salsa; it substituted nicely. I've also doubled the recipe with no problem. Next, I'm going to make the filling and freeze for when I want it soon. I serve guacamole with it everytime. As far as healthy though- I don't think so, the cheddar and the cream cheese, even reduced fat, make this a yummy comfort food.
