AWESOME!! This was so good, the only thing I would do differently would be to puree the cauliflower so it had the consistency of mashed potatoes. Just a personal thing though!It was really a very delicious dish and we will be making it again. Well written and easy to follow recipe, thanks so much for sharing!

Very yummy indeed! My BF and I are not on low carb diets, but I decided to 'sneak' this dish in one night. He could not believe that it was cauliflower. I also loved it, and I have never been a fan of this vegetable. The only changes I made was to add 1-2 Tbs of finely grated romano cheese that I had leftover from the night before. It added so much flavor and richness. I also pureed the cauliflower after zapping it in the microwave... it was almost the exact consistency of mashed potatoes. You must try it... it will change your mind about cauliflower forever!

Oooooohhh Yeah! As Barry White would say. I used cream cheese instead of sour cream and added some chopped Jalapeno peppers. My family rarely eats actual potatoes any more. I also put my cauliflower in the food processor and pulse it to "rice" size pieces so I can stir fry it with vegies and have fried rice, too. Cauli-tatoes are my favorite though and my salvation on my 40 lb weight loss journey.

Excellent. I wasn't sure about the texture at first, but I got over it by the 2nd or 3rd bite because it just tased so good. I think as long as you go into it thinking of it as a cauliflower dish rather than expecting it to be like potatoes, the texure's great. I steamed frozen cauliflower, used turkey bacon, cut down a little on the sour cream, cut the green onions by half, added an extra 1/4 cup cheddar, and added a little grated parmesan reggiano. DH couldn't stop raving about it. No leftovers for us.

This is one of the VERY BEST low carb dishes I have ever had!!! I steamed fresh califlower on the stove and made sure to drain it very well before adding the other ingredients. Thank you so much for posting this recipe...my family loved it and we will have it often. Good enough to serve those not low carbing too!

Yummy!! My husband ate more than half the dish that night. The recipe is one I plan on sharing. It truly tastes like a loaded baked potato, you will be pleasantly surprised!

Yummy!! Thank you so much for this wonderful recipe from all of us 'low carbers'! It was delicious. I used Green Giant Culiflower & Cheese Sauce frozen side dish and put all of the ingedients into my food processor (except bacon) pureed and served just like that. I skipped the baking and although a bit runny, it tasted just like mashed potatoes. This will become a favorite side dish of mine several times a week from now on. Thanks again for the yummy post!!

Wow! This was very easy and tasted so decadent! I microwaved a separated head of salted cauliflower on high for about 10 minutes in a covered bowl, drained off the water and then I smashed the chunks into approx 1/4" tidbits with a potato masher. I followed the recipe as written except I did add a handful of leftover cooked broccoli to the cauliflower and about 1/4 cup of leftover ranch dip because I ran short on sour cream. I loved the texture, the flavor and the ease of making this dish. It is a fantastic recipe and I will definitely be making it regularly.
