I have been looking for a recipe like this and am so glad I found it. This is just the right sweetness and flavor that I like. I used Splenda instead of sugar and left out the mint. This will be a "doer again"! Thanks, Carole in Orlando

    Perfect warm day luncheon- I was going to have this with sushi but got lazy and doubled up on this salad & had it with leftover Jiacama salad on the side - Added freshly made croutons Excellent Thanks mOm

    Everyone in my family has made these for as long as I can remember. We use fresh parsley instead of mint. Great summer side salad!

    Delicious. I made this as something lighter to all the heavy stuff at Thanksgiving (sorry for the delay). The next day it was great after marinating even longer. Thank you.

    Delicious! My father-in-law gave us some homegrown tomatoes and cucumbers (and this is the perfect recipe for them.) I added an extra Tbs. of Splenda and it turned out great. --The Home Tech

    I've been making this for years (when I remember to do so). I don't use the mint, but it's delicious without it. Very refreshing.

    With fresh-off-the-vine tomatoes and cucumbers from the local farmer's market this was heavenly! I used a red onion,thinly sliced, and fresh mint from my herb garden- the mint really adds a nice zip to the overall flavor! Thanks for posting this-I'll be making it a lot as long as the tomatoes last!

    mOm what a refreshing salad! It was so easy to pull together. I used rice vinegar and olive oil. Make sure to use the mint it adds grat flavor.
