I am totally addicted to this! I did change to red peppers as I do not like green peppers and stewed tomatoes because that is what I had on hand. I also added 1/4 teaspoon of cumin and low sodium V8 for the tomato juice. I used Uncle Ben's cooked brown rice so this makes for a very quick meal. I had to make a second batch it was so good.

Awesome! Even easier and much better than rice a roni spanish rice. I used leftover rice from another meal and instead of tomato juice, I used tomato sauce. It was really yummy and soooo quick. Thanks for the recipe!

This is a great recipe. I also used tomatoes and green chilies in place of the onion and green bell pepper. We loved it. Thanks for sharing.

I made it the first time and it was perfect. But I changed the whole tomatoes and chopped green bell peppers to diced tomatoes and mild green chilies instead. It was so good, everyone loved it. This is a versatile dish because you can use any type of cooked rice.
