This recipe was indeed very easy and simple. I loved that it was a one dish meal. We had Greek salad with it, so clean up was a breeze. My DH and kids gobbled it down. It's been added to our permenant recipe list. I changed a couple of things though: 4 garlic cloves as opposed to 3, I changed the amount of water to 1/2 cup, and added 1 t. of basil in with the olive oil, lemon, and oregano mix. I also added a bit more lemon juice. Still, the chicken and potatoes were absolutely wonderful, as was the aroma during baking. Thanks for posting, FlemishMinx!

I cut this in half and cooked in a 9x9 casserole dish, which I feel was a little too small because everything did not brown properly. I couldn't help myself and added a bit of chopped onion that needed to be used and a bit of feta that's been sitting around collecting dust (not literally). Still, I have to agree with MacV, I found this a little bland and like it was wanting something more. BF liked it a lot so I may try it again and see what I can work out (in a larger pan, particularly because I was irked that a lot of my potatoes weren't browning well !) But overall I think this is a good recipe! I never would have thought to cook the chicken with the potatoes and they really add to each others flavors in doing so. I think this recipe would also be very kid-friendly and, like Latchy said, a good stanby where you know you will always have all the ingredients on-hand. Thanks for a nice dinner, FlemishMinx.

I've already reviewed this once, but I just wanted to say this makes a great soup, too. It was cold, wet and my roommate was whining for soup. I'd already decided on this recipe, so I just increased the amount of chicken stock, cooked the chicken in it, then added everything else (except the olive oil). It was great.

I think I have made this about 5 times in the last three weeks...each time with TREMENDOUS success. It's idiot proof and perfect for when people are over (as long as they don't mind garlic!). This was AWESOME... something I can actually make without worrying! THANK YOU!!!!

This was really yummy and easy! I did make a few changes I added half a diced onion and half a bell pepper and I used a package of chicken tenders which I cut up, and I increased the oregano to 1 tablespoon, I used about 5 small red potatoes and it was perfect. Also, I had to bake mine for an hour and 15 mins to get the potatoes tender. We really liked this meal the potatoes were tender, my chicken didn't dry out and it crisped up a nice golden brownish...oh so tasty!

Fantastic! Quick, easy and so tasty. I usually double the recipe since I feed 5 - 6 people at a sitting and throwing in a little extra chicken or potato to stretch it further doesn't hurt it in the least. I use skinless drumsticks or thighs since it's cheaper and make sure I stir at least twice during the baking. Delicious!!!

This does smell wonderful while cooking, however my DH and I were not as enthused as others--very easy to prepare, just needed something more--I just used 2 chicken breasts because we don't need that much meat, but needed another herb or something.

This dish is great. I used the juice of 2 lemons, which was just short of a cup. I also used more garlic and oregano than what is called for because I just love that lemon/garlic/oregano mix. We had a meal that was easy, healthy, smelled great cooking, and was bursting with flavor. I'll surely be making this again and again, thank you for posting.

Greek chicken and potatoes recipe is delicious. It will become a part of my permanent recipe file. However, I thinly sliced the potatoes. It found it necessary to cook it 45 minutes to an hour to cook to tender. (covered)

My Greek friend used to make this so it makes me think of him. He used fresh (if available, otherwise powdered) rosemary rather than oregano. Thanks for the memory of a dear friend! And a great recipe.
