Hot dogs are totally boring without this glistening sauce. Last night was my third time making it. Waiting around for the liquids to reduce is the only drawback. To save some time, I only used enough water so the onions were well-covered. I couldn't notice any difference. Conversion notes: 2 T tomato paste = 2 T ketchup 2 tsp corn syrup = 2.5 tsp gran. sugar 1 tsp cornstarch = 2 tsp flour

this was much better used the next day. the first day the vinegar seemed a bit too strong for me. It was very good though and for a new yorker like me the only way to eat a hot dog! I will make this again.

Very good! My sandwiches and the rolls I make for my DH's lunch were crying for this
As per your suggestion I did add cayenne and then some cumin powder too and used sugar instead of the corn syrup. Thank you for this recipe sweetie!

A local hamburg place here serves a similar type sauce that I always thought was "their own" recipe. I could tell what a couple of the ingredients were but really could not pin it down till now. That great sauce was this! But the added ingredients are 1/2 tsp cilantro and 1/4 tsp of chipolte pepper flakes. Glad I found it because now its my "own" recipe!

I have to agree with the others. Having retired from F.D.N.Y. I have definately consumed my share of "Dirty Water Wagon" Hot dogs. Imagine a KISS without a squeeze. Hot dogs without this sauce are mediocre to say the least. I would give this recipe 10* if allowed. BUT, like certain foods that are recognized by their location no one will ever be able to capture the total essence of a New York hot dog because to many related factors are missing. The Water, atmosphere, environment, the hustle bustle, the sounds etc. This brings back so many memories. Just like street corner pretzels in the winter. Thanks so much for the recipe. Cap'n Jack

Well after i figured out tht you simmer it uncovered it was all uphill from there. It was awesome with the sharp yellow mustard and a good kosher beef hotdog! This is a keeper for sure. This sauce was on my short list of what I missed after I moved from New York.

I must admit this wasan amazing sauce.My DH hates sausages & i just love them.I wanted to make him like it-i know thats not fair so i came across this recipe thanks to Fay of course who happens to be a great Zaar fan,who introduced me to Zaar & also happens to be my Cousin sister.Anyways,i made them i morning for breakfast though we dont get the type of sausages u have mentioned but the hot dogs turned out lovely & guess what today my hubby asked for them himself that says it all!!!!!!!!!!
