This rice dish was delicious! So much flavor- I used a vegetable broth for it. However, I had some problems cooking it. I followed your directions exactly, and when it never told me to bring the rice to a boil I just figured it would work anyways. So, 20 minutes went by and I was all ready to eat and the rice wasn't cooked at all- no broth was absorbed. I then brought it to a rolling boil, reduced to a simmer, and covered for 15 minutes. By then it was done perfect, and made a wonderful rice dish. I wish I just brought it to a boil in the first place, but at least it turned out fine! I will be making this again- Thanks for sharing!

Great side dish for tex mex meal! Browning the rice in garlic flavored oil gives the dish a wonderful flavor. When prepared according to the recipe, the flavors are very mild, thus kid-friendly, and a nice side to spicy food. You could kick it up with more/hot salsa or added spices if that's your preference but we enjoyed this very much as stated. Thanks, Cindy!

This rice is delicious and so pretty in appearance with its beautiful orange colour. The fact that the colour orange makes you hungry is best suited with this recipe
This was so easy to put together! I used THREE tbsps of salsa for this< THANKS for a delicious side dish for our dinner tonight!

Just had to add some comments as we've been making this for awhile now - I leave the garlic in (adds mor flavor), using a GOOD salsa is key (we prefer homemade) AND this is the most important part- USE BROWN RICE - it makes it sooooooo good! My hubby is not a brown rice sort of guy (neither is his family) they all raved about this rice - Thanks!!

Hi Cindy, I made your rice today, and it was excellent, although I did however, double the recipe and browned the rice with one chopped onion, and also I used 1-1/2 cups salsa, and added 1 halapeno pepper, and also I left in the whole garlic cloves. After the rice was done, I mixed in about 1/3 cup grated Romano cheese. This turned out wonderful! Thanks so much for sharing, this is a very tasty rice recipe!...Kittencal

Awesome rice with a wonderful flavor and I made this with Garlic Beef Enchiladas (#18387)....great together. I used can corn since I didn't have frozen and mixed chicken OXO with water for the broth and it turned out perfect. Thanks for sharing this recipe Cindy.

This taste just like the rice we'd eat in Texas! So yummy!! I think the only change I'll make will be adding closer to a half cup of salsa next time. Other than that this was great!!

This is an excellent recipe and very easy to put together. I used Uncle Bens converted rice. The only thing I did different was to add about 1/2 cup of chopped onions to cook while the rice was browning. My family loved this and it is very close to what we eat at our local mexican restaurant. Thanks for sharing; we will definitely be making this often.
