Ihave never made my own pickles before. IWhen I went to the cupboard there no white vinegar so I substituted red wine vinegar and balsamic. The cucumbers were lovely and crisp and because of the baslamic vinegar they were not too sharp. Can I just add more veggies to the mixture or do I have to throw it out and start again for a new batch?

Oh, Jim - this is fabulous!! I made the recipe exactly as posted except to add a little fresh garlic. I used red bell peppers since they were on sale this week (is $.39 each a good price?). I put everything into my Tupperware marinating container (love that thing!) and let it sit overnight. The next morning I took the whole thing in to my Jazzercise class and you should have seen those ladies go for those cukes (at 7:30am!). Needless to say, I didn't bring anything home with me and I have a ton of recipe requests for Monday night's class. So you will be quite the popular guy, Jim! Thanks so much for posting - I've got cukes coming out of my ears in the garden!!

These are delicious! It's nice you can change the pucker power without it affecting the flavor of the recipe!
A very refreshing side dish!

These are so good. I'm making my third batch in less than a week and cukes aren't even in season yet! A great low fat recipe.

A quick and easy way to get the taste of home canned cukes on the table. We added onions and red pepper. Next batch will try with some fresh garlic, and sliced carrots and perhaps some zucchini

This is a great recipe for any veggie! I used cukes, vidalia onion and thinly sliced carrots. I liked the tartness of this recipe and did not change the amounts of vinegar, but I do think I might add a little fresh garlic next time!

These were very simple to make and very tasty too. I think this would work well with carrots, onions, and radishes too. Thanks for a lovely refreshing recipe.
